,%20so%20I%20thought%20it%20was%20time%20to%20tackle%20the%20mother%20of%20them%20all:%20Menudo.%20This%20tripe%20soup%20is%20often%20considered%20the%20ultimate%20hangover%20cure,%20similar%20to%20many%20bone%20broth%20soups%20found%20worldwide.%3C/p%3E%3Cp%3EIn%20Northern%20Mexico,%20Menudo%20is%20cooked%20with%20hominy,%20which%20is%20a%20form%20of%20corn%20that%20has%20been%20soaked%20in%20an%20alkaline%20solution.%20This%20process%20(called%20nixtamalization)%20removes%20the%20hull%20and%20germ%20from%20the%20kernel,%20effectively%20removing%20most%20of%20corn%E2%80%99s%20toxic%20anti-nutrients%20and%20making%20it%20more%20digestible.%20This%20process%20has%20been%20around%20since%20at%20least%201500%20BCE,%20when%20people%20in%20present-day%20Mexico%20and%20Guatemala%20would%20soak%20their%20corn%20in%20water%20mixed%20with%20wood%20ash.%20If%20you%20do%20decide%20to%20use%20hominy%20in%20your%20recipe,%20be%20sure%20to%20get%20the%20organic%20stuff%20to%20ensure%20it%20isn%E2%80%99t%20made%20with%20GMO%20corn.%20But%20definitely%20feel%20free%20to%20omit%20the%20hominy%20and%20still%20consider%20the%20recipe%20authentic:%20it%20is%20also%20called%20Pancita%20in%20some%20regions,%20and%20from%20what%20I%20can%20tell%20Pancita%20also%20doesn%E2%80%99t%20usually%20include%20hominy.%3C/p%3E%3Cp%3Eserves%20six%3C/p%3E%3Cp%3Esoup%20base:%3C/p%3E%3Cp%3EMenudo%20is%20made%20with%20all%20sorts%20of%20bones%20to%20make%20the%20broth,%20but%20the%20most%20common%20I%E2%80%99ve%20seen%20are%20pig%E2%80%99s%20feet,%20cow%E2%80%99s%20hooves,%20or%20beef%20knuckles.%20For%20my%20own%20purposes%20I%20used%20pig%E2%80%99s%20feet%20to%20add%20an%20interesting%20dynamic%20and%20to%20avoid%20a%20soup%20that%E2%80%99s%20too%20%E2%80%9Cbeefy%E2%80%9D%20tasting.%3C/p%3E%3Cp%3EI%20should%20also%20note%20that%20it%E2%80%99s%20easiest%20to%20cut%20the%20tripe%20when%20it%E2%80%99s%20partially%20frozen.%20Also,%20for%20the%20sake%20of%20saving%20time,%20you%20don%E2%80%99t%20need%20to%20thaw%20out%20your%20pig%E2%80%99s%20feet%20(or%20cow%E2%80%99s%20hooves,%20beef%20knuckles)%20before%20cooking.%3C/p%3E%3Cp%3EPut%20the%20feet%20and%20tripe%20in%20a%20large%20pot,%20and%20fill%20it%20with%20water.%20Boil%20for%2010%20minutes,%20then%20drain%20and%20rinse%20gently%20with%20cold%20water.%20Return%20the%20pieces%20to%20the%20pot%20and%20fill%20with%20enough%20water%20to%20cover%20everything%20by%20at%20least%201%E2%80%B3,%20about%2012%20cups%20total.%3C/p%3E%3Cp%3EBring%20everything%20to%20a%20boil%20and%20reduce%20heat%20to%20a%20simmer,%20and%20simmer%20for%20one%20hour.%20Be%20sure%20to%20scoop%20up%20any%20foam%20or%20fat%20that%20accumulates%20on%20the%20surface.%20After%20an%20hour,%20add%20the%20bay%20leaves%20and%20simmer%20until%20the%20feet%20just%20start%20to%20fall%20apart,%20about%20another%20hour.%20Add%20water%20as%20needed%20to%20keep%20the%20pieces%20fully%20submerged.%3C/p%3E%3Cp%3EAs%20the%20soup%20simmers,%20prepare%20the%20chili%20paste%20by%20placing%20the%20chiles%20in%20a%20small%20pot%20with%20about%20one%20cup%20of%20water,%20and%20bring%20to%20a%20boil.%20Once%20it%20starts%20boiling,%20remove%20the%20pot%20of%20chiles%20from%20the%20heat%20and%20let%20it%20sit%20for%20about%20thirty%20minutes.%20Once%20they%20are%20cool,%20blend%20the%20chiles%20with%20the%20onion%20and%20garlic,%20adding%20some%20of%20the%20water%20you%20boiled%20the%20chiles%20in%20if%20the%20paste%20gets%20too%20thick.%3C/p%3E%3Cp%3EOnce%20the%20pig%E2%80%99s%20feet%20are%20just%20starting%20to%20fall%20apart,%20add%20the%20chili%20paste%20(pour%20it%20through%20a%20strainer%20to%20catch%20any%20big%20chunks%20or%20seeds),%20oregano,%20and%20dried%20cilantro,%20and%20simmer%20for%20another%2030%20minutes.%20Next,%20fish%20the%20feet%20out%20and%20set%20them%20aside%20to%20cool%20while%20the%20soup%20simmers%20for%20another%2030%20minutes.%20This%20is%20also%20when%20you%20would%20add%20the%20hominy%20if%20you%E2%80%99re%20using%20it.%20Once%20the%20feet%20are%20cool,%20remove%20any%20pieces%20of%20meat%20you%20can%20find%20and%20add%20it%20to%20the%20soup.%20Discard%20the%20rest%20of%20the%20feet.%3C/p%3E%3Cp%3EAfter%20the%20soup%20has%20simmered%20for%20an%20additional%2030%20minutes%20(three%20hours%20total%20%E2%80%93%20one%20hour%20with%20just%20the%20tripe/feet,%20one%20hour%20with%20the%20bay%20leaves,%2030%20mins%20with%20the%20chili%20paste,%2030%20mins%20without%20the%20feet),%20it%E2%80%99s%20ready%20to%20serve.%20Add%20salt%20and%20pepper%20to%20taste%20(probably%20about%201%20tbsp%20salt%20and%201%20tsp%20pepper),%20and%20add%20the%20lime%20juice.%20Serve%20with%20diced%20white%20onion%20and%20more%20dried%20oregano,%20and%20crushed%20red%20pepper%20for%20additional%20spiciness.%20Some%20people%20like%20to%20add%20fresh%20chopped%20cilantro%20as%20well.%3C/p%3E%3Cp%3EMany%20people%20like%20to%20refrigerate%20this%20soup%20overnight%20and%20reheat%20the%20next%20day,%20to%20allow%20the%20flavors%20to%20marry,%20and%20I%20
