- 1 1/4 c. Minced peeled cucumber, divided
- 1/2 c. Minced green bell pepper
- 2 Tbsp. Minced onion
- 1 Tbsp. Minced seeded jalapeno pepper
- 1 Tbsp. White vinegar
- 1/2 tsp Sugar
- 1/4 tsp Salt
- 1/4 tsp Dry oregano
- 1/4 tsp Warm sauce, (1/4 to 1/2)
- 1 x Clove garlic, halved
- 14 1/2 ounce No-salt-added whole tomatoes, (1 can) undrained
- 3/4 c. Water

- Place 1 c. cucumber and next 10 ingredients (cucumber through tomatoes) in a food processor, and process till mix is pureed. Pour into a bowl; stir in water. Cover and chill.
- Yield: 4 servings (serving size: 1 c.).
- Serving Ideas : Top each serving with 1 Tbsp. remaining cucumber.
