.%20After%20allowing%20the%20dough%20to%20rest%20in%20the%20fridge%20for%2024%20hours,%20I%20decided%20to%20make%20pita%20bread%20with%20it%20and%20fill%20them%20with%20chicken%20fajita%20goodies%3C/p%3E%3Cp%3EThere%20really%20is%20something%20very%20satisfying%20about%20making%20pita.%20It's%20amazingly%20simple,%20quick%20and%20makes%20that%20little%20pocket%20in%20the%20middle%20all%20by%20itself%3C/p%3E%3Cp%3ELook%20at%20that%20deep%20rich%20color%20the%20dough%20has.%20Yes,%20thats%20from%20the%20Mesquite%20Flour.%3C/p%3E%3Cp%3EI%20have%20to%20say%20one%20thing%20though....this%20wasn't%20my%20favorite%20bread.%20I%20think%20there%20were%20too%20many%20flavors%20going%20on.%20At%20least%20with%20the%20fajita%20goodies%20inside.%20It%20did%20taste%20good%20just%20dipped%20it%20in%20the%20a%20little%20oil%20though.%20At%20this%20very%20moment,%20I%20have%20a%20loaf%20in%20the%20oven.%20I%20think%20I'm%20going%20to%20pick%20up%20some%20hummus%20and%20eat%20it%20for%20lunch%20tomorrow.%3C/p%3E%3Cp%3EHead%20on%20over%20the%20Michelle's%20at%20BigBlackDogs.net%20and%20see%20what%20the%20others%20did%20with%20their%20assignments.%3C/p%3E%3Cp%3ELet%20me%20tell%20you%20something%20about%20Mesquite%20Flour.%20When%20you%20think%20of%20Mesquite,%20instantly%20you%20think%20of%20the%20smokey%20flavor%20that%20you%20get%20when%20you%20bbq%20with%20mesquite%20wood.%20The%20flour%20is%20a%20whooooole%20different%20kind%20of%20animal.%20It's%20made%20from%20the%20been%20pods%20of%20the%20mesquite%20bush,%20not%20the%20wood.%20And%20it%20has%20a%20sweet%20spiciness%20about%20it.%20Reminds%20me%20of%20cinnamon%20/%20cayenne%20pepper%20combo%20without%20the%20heat.%20Very%20hispanic%20in%20nature.%3C/p%3E%3Cp%3EPeter%20from%20Casa%20de%20Fruta%20had%20also%20sent%20me%20a%20brochure%20with%20some%20recipes.%20I%20noticed%20a%20lot%20of%20dessert%20recipes%20and%20my%20wheels%20started%20turning.%3C/p%3E%3Cp%3EAllow%20me%20to%20introduce%20you%20to%20my%20Mocha%20Mesquite%20Cupcakes%20with%20Mesquite%20Frosting.%3C/p%3E%3Cp%3ENow%20we're%20talking.%3C/p%3E%3Cp%3EThese%20are%20amazing%20in%20flavor.%20They're%20moist.%20They're%20vegetarian.%20No%20eggs%20even.%20I%20didn't%20do%20that%20on%20purpose.%20It%20just%20happened%20to%20be.%20Do%20you%20remember%20how%20fun%20it%20was%20as%20a%20kid%20to%20lick%20the%20bowl%20after%20mom%20made%20a%20cake?%20Then%20all%20this%20hype%20about%20salmonella%20started%20and%20%22Oh%20nooo,%20don't%20lick%20that%20bowl!%20It%20has%20raw%20egg%20in%20it!!%22%20Well,%20guess%20what?%20You%20can%20lick%20this%20bowl%20clean%20and%20not%20have%20a%20single%20worry.%20And%20to%20be%20honest,%20you'll%20probably%20want%20to.%20Forget%20giving%20it%20to%20the%20kids.....hell,%20you're%20gonna%20wanna%20keep%20that%20bowl%20all%20to%20yourself!%3C/p%3E%3Cp%3EMocha%20Mesquite%20Cupcakes%3C/p%3E%3Cp%3EIn%20a%20bowl,%20whisk%20together%20the%20cocoa%20powder%20and%20coffee.%20Set%20aside%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20mix%20together%20the%20sour%20cream,%20mesquite%20flour%20and%20vanilla%20until%20well%20combined.%20Whisk%20in%20the%20coffee%20mixture%20until%20smooth.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20cake%20flour,%20sugar,%20baking%20soda%20and%20salt.%20On%20medium%20speed,%20beat%20in%20the%20mesquite%20mixture%20and%20beat%20for%20one%20minute.%3C/p%3E%3Cp%3EAt%20this%20point,%20I%20pour%20some%20of%20the%20batter%20into%20a%20measuring%20cup%20for%20liquids%20(the%20one%20with%20the%20pour%20spout).%20This%20makes%20it%20sooo%20much%20easier%20to%20fill%20the%20muffin%20tins,%20which%20you%20will%20almost%20to%20the%20top%3C/p%3E%3Cp%3EBake%20in%20your%20preheated%20375'F%20oven%20for%20about%2020%20-%2025%20minutes,%20or%20until%20a%20toothpick%20inserted%20into%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3EYou'll%20probably%20have%20some%20batter%20left%20over.%20Make%20a%20few%20more%20cupcakes.%20Or,%20like%20I%20did....just%20lick%20the%20bowl%3C/p%3E%3Cp%3EAllow%20to%20cool%20on%20a%20rack%3C/p%3E%3Cp%3EI%20think%20those%20faults%20are%20becoming%20my%20signature.%20O'well...it's%20going%20to%20be%20covered%20with%20frosting%20anyway.%3C/p%3E%3Cp%3EMix%20together%20your%20frosting%20as%20follows:%3C/p%3E%3Cp%3ECream%20the%20butter.%20Add%20the%20powdered%20sugar,%20mesquite%20flour%20and%20cocoa%20powder%20and%20beat%20until%20fluffy.%20Add%20the%20vanilla%20and%20mix%20until%20smooth.%3C/p%3E%3Cp%3EBam%20Boom,%20it's%20done.%3C/p%3E%3Cp%3EFrost%20your%20cupcakes....%3C/p%3E%3Cp%3EHopefully%20you'll%20do%20a%20much%20better%20job%20than%20I%20will.%20Maybe%20one%20of%20these%20days%20I%20can%20take%20a%20class%20or%20something%20cuz%20seriously....it%20looks%20like%20an%208%20yr%20old%20did%20it.%3C/p%3E%3Cp%3EBut%20oh%20my%20goodness....are%20these%20good!!%20The%20Mesquite,%20chocolate%20and%20coffee%20flavor%20combo%20is%20heavenly.%20Thank%20you%20so%20much%20Peter%20for%20allowing%20me%20to%20experience%20and%20incredible%20product!%3C/p%3E%3Cp%3EI%20think%20I%20will%20be%20ordering%20more%20of%20this%20Mesquite%20Flour.%20There%20are%20so%20many%20other%20things%20I'd%20like%20to%20try.%3C/p%3E%3Cp%3EAs%20for%20the%20cupcakes...I%20still%20have%20a%20couple%20left.%20My%20girls%20and%20I%20are%20heading%20to%20'Bama%20for%20a%20bit%20of%20a%20vacation%20and%20long%20overdue%20time%20with%20the%20family.%20Am%20I%20allowed%20to%20bring%20food%20on%20the%20plane?%20I%20want%20to%20bring%20these%20babies%20with%20me%20to%20share%20with%20my%20sisters%20and%20their%20kids.%3C/p%3E%3Cp%3E***Update%20on%20Mesquite%20Bread%20(8/24/10):%20With%20the%20leftover%20mesquite%20dough%20that%20I%20had,%20I%20made%20a%20simple%20loaf%20of%20bread%20and%20brought%20it%20with%20me%20when%20I%20visited%20my%20family.%20We%20simply%20sliced%20it%20and%20spread%20on%20some%20butter%20or%20dipped%20it%20in%20a%20butter%20garlic%20sauce....and%20it%20was%20fantastic!!!%3C/p%3E){kind=link}
