- 10 lbs lean ground beef
- 2 lbs onions, chopped 1/4" dice
- 1 lb green peppers diced small
- 10 eggs lightly beaten
- 5 tbls salt
- 1 1/2 tbls pepper
- 1 1/2 qrts canned diced tomatoes
- 2 1/4 cups crackers
- 1 1/2 cups katchup

- place all ingredients in a very large bowl and mix throughtly, place in loaf pans and press down with spoon. bake at 300 degrees for 60 mins. remove from oven and invert each loaf over 8" wire rack to drain juice. spread 1/2 cup ketchup over each loaf. cut into portions 5-6 onces each and keep warm.
