  • 1 med Carrot, peeled & shredded
  • 1 lrg Granny Smith apple, cored & shredded
  • 1/2 c. Oil
  • 2 x Large eggs
  • 1/3 c. Sugar
  • 2 tsp Vanilla
  • 1/2 c. Coconut shreds, unsweetened
  • 1/3 c. Raisins
  • 1/3 c. Pecans
  • 3/4 c. Flour, whole-grain wheat
  • 1/2 c. Rolled oats, old-fashioned
  • 3 Tbsp. Wheat germ
  • 1 tsp Baking soda
  • 3/4 tsp Cinnamon
  • 1/2 tsp Baking pwdr
  • 1/4 tsp Salt
  • 1/4 tsp Grnd ginger
  • 1/8 tsp Nutmeg

Инструкции

  1. Preheat oven to 375.
  2. Process oil, Large eggs, sugar and vanilla till well-blended - about 30 seconds.
  3. Scrape down the bowl. Add in carrot, apple and remaining ingredients. Pulse till just combined, 6-8 times, scraping down bowl as necessary. Don't overprocess.
  4. Divide batter among 1/3-c. muffin tins, filling 3/4 full. Bake about 20 min - till tester comes out clean.
