  • 1 c. mascarpone cheese
  • 2 Tbsp. granulated sugar
  • 1 c. quartered fresh strawberries
  • 1 c. fresh raspberries Fresh mint leaves Raspberry Wine Sauce
  • 1 1/2 c. dry red wine
  • 1 pkt (300 g) frzn raspberries, thawed, strained and pureed
  • 1/3 c. granulated sugar
  • 1 tsp vanilla

  1. Raspberry Wine Sauce:In large saucepan over medium heat, stir together wine, raspberry puree and sugar; bring to boil. Boil gently till reduced to 3/4 c., about 30 min. Remove from heat; stir in vanilla. Cover and chill till chilled, about 1 hour. (Make-ahead: Chill for up to 3 weeks.)
  2. In bowl, stir together mascarpone and sugar.
  3. Layer mascarpone mix, berries and sauce in stemmed glass dishes. (Make-ahead: Cover and chill for up to 6 hrs.) Garnish with mint leaves.
