  • 20 x tubes squid, cleaned, and, rinsed
  • 2 Tbsp. extra virgin olive oil
  • 1 clv garlic, finely, minced
  • 1 x lemon, segments, only
  • 2 Tbsp. lemon, juice
  • 1 Tbsp. minced thyme
  • 1 Tbsp. minced parsley
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper frisee, to garnish Sambal Vinaigrette
  • 1 Tbsp. sambal
  • 1/4 tsp chopped garlic
  • 2 Tbsp. lemon, juice
  • 4 Tbsp. rice vinegar
  • 1/4 c. extra virgin olive oil

Инструкции

  1. Cut a few slashes in the squid with the tip of a sharp knife.
  2. Combine extra virgin olive oil, garlic, lemon segments and juice, fresh herbs, salt and pepper in a bowl.
  3. Pour over squid and chill for one hour.
  4. Preheat grill or possibly fry pan over high heat.
  5. Cook the squid 20 to 30 seconds on each side.
  6. Place squid in the middle of a bowl or possibly plate.
  7. Top with frisee and drizzle 2-3 Tbsp. of vinaigrette over.
  8. Sambal Vinaigrette:In a small bowl whisk together sambal, garlic, lemon juice and rice vinegar.
  9. Slowly whisk in extra virgin olive oil.
  10. Adjust seasoning and chill till ready to use.
