  • 2 c. bite sized, cooked, chicken breast
  • 1 c. cooked rice
  • 1 can cream of mushroom soup, diluted with a little lowfat milk
  • 1/4 to 1/2 c. mayonnaise
  • 2 c. cooked broccoli, cut up small
  • 1 c. sharp Cheddar cheese
  • 1 can sliced water chestnuts
  • Salt and pepper to taste
  • Garlic, to taste (optional)
  • 1 can of French fried onions (topping)

  1. Mix all ingredients and bake in a 2-qt casserole, sprayed with Pam, for 3 0 to 40 min at 350 degrees. Serves a bunch - mmmmm good.
