- Slice up one side of chilies. Open lengthwise and remove any seeds.
- Cut American cheese to size of 1/2 of chili and lay on chili Fold other half of chili over the cheese Take egg(s) out, break into bowl, beat lightly with a fork and bring to room temperature.
- Add in flour to thicken. When you add in flour, beat lightly with egg.
- Let it sit for a little while - will help make the mix smoother, then beat till smooth.
- Add in flour as needed till you get a medium consistency
- Heat 1/4" oil to 300* in large frypan (same temp as cook scrambled Large eggs at)
- Dip stuffed chilies in egg/flour mix
- Fry till egg set and lightly browned. Flip and fry other half.
- Serve warm
- Note - if you get mix too thick, add in water (tiny bit at a time) to thin. Will thin quickly!
