I've been to New Orleans, several times, but never during the Mardis Gras season. (I'm not so sure I could handle the crowds and craziness.) %20Mardi%20Gras%20season%20begins%20on%20January%206,%20of%20each%20year%20and%20ends%20on%20Fat%20Tuesday,%20the%20day%20before%20Lent.%20One%20of%20the%20wonderful%20traditions%20of%20Mardi%20Gras,%20and%20probably%20the%20most%3C/p%3E%3Cp%3Edelicious,%20is%20the%20King%20Cake.%20The%20%22traditional%22%20King%20Cake%20is%20made%20from%3C/p%3E%3Cp%3Etwisted%20strands%20of%20cinnamon%20dough.%3C/p%3E%3Cp%3EA%20few%20years%20ago,%20I%20was%20handed%20a%20slice%20of%20%22King%20Cake%22%20from%20a%20local%20bakery.%20%20It%20was%20bone-dry,%20and%20didn't%20have%20a%20whole%20lot%20of%20flavor,%20and%20so%20I%20made%20it%20my%20personal%20mission%20to%20try%20baking%20my%20own%20King%20Cake.%20%20%20I%20really%20enjoy%20baking%20sweet%20rolls,%20and%20once%20I%20searched%20various%20recipes,%20I%20decided%20to%20make%20a%20brioche-type%20dough,%20with%20a%20cream%20cheese%20filling.%3C/p%3E%3Cp%3EEach%20cake%20is%20decorated%20in%20the%20traditional%20Mardi%20Gras%20colors%20-%20purple%3C/p%3E%3Cp%3Erepresenting%20justice,%20green%20representing%20faith,%20and%20gold%20representing%3C/p%3E%3Cp%3Epower--%20and%20I%20think%20they%20look%20so%20festive.%3C/p%3E%3Cp%3EWorking%20with%20yeast%20is%20a%20fear%20that%20I%20have%20successfully%20overcome.%20%20I%20just%20remind%20myself%20that%20yeast%20likes%20to%20be%20warm%20(not%20hot)%20and%20likes%20to%20be%20fed%20something%20%22sweet%22.%3C/p%3E%3Cp%3EIn%20this%20case,%20warm%20water%20and%20sugar%20makes%20the%20active%20dry%20yeast%20bubbly%20and%20creamy.%20%20To%20the%20dough,%20I'll%20be%20adding%20some%20freshly%20grated%20nutmeg%20as%20well.%3C/p%3E%3Cp%3EMaking%20bread%20dough,%20with%20my%20stand%20mixer%20reduces%20that%20amount%20of%20elbow%20grease%20that%20I%20need.%20%20For%20the%20wet%20ingredients,%20I'm%20using%20scalded%20milk,%20butter%20and%20eggs.%20%20Once%20the%20dough%20has%20been%20mixed%20and%20kneaded,%20it's%20placed%20into%20an%20oiled%20bowl,%20covered%20and%20left%20to%20rise%20for%202-3%20hours.%3C/p%3E%3Cp%3EHowever,%20I%20have%20a%20shortcut%20that%20works%20for%20me,%20every%20time.%20I%20turn%20on%20my%20oven%20to%20WARM%20for%202%20minutes,%20then%20shut%20if%20off.%20%20This%20creates%20a%20comfy%20and%20cozy%20warm%20%22proofing%22%20area,%20that%20speeds%20up%20the%20process%20for%20me.%20This%20dough%20rose,%20beautifully,%20in%20just%20over%20an%20hour!%3C/p%3E%3Cp%3EWhile%20the%20dough%20was%20proofing,%20I%20made%20the%20cream%20cheese%20filling:%20cream%20cheese,%20a%20little%20flour,%20lemon%20zest%20and%20juice,%20confectioner's%20sugar%20and%20pure%20vanilla.%3C/p%3E%3Cp%3EThe%20dough%20has%20doubled,%20and%20I%20gently%20press%20it%20down,%20and%20press%20it%20into%20a%20rectangular%20shape.%20%20I%20spread%20the%20cream%20cheese%20filling,%20leaving%20about%20a%201%22%20border.%3C/p%3E%3Cp%3EGrabbing%20the%20long%20end,%20I%20rolled%20this%20up%20like%20a%20jelly%20roll,%20and%20then%20pinched%20the%20seams%20together%20so%20that%20the%20cream%20cheese%20filling%20wouldn't%20ooze%20out.%3C/p%3E%3Cp%3EI'm%20ordered%20this%20stoneware%20baking%20dish%20from%20King%20Arthur%20Flour--%20which%20made%20baking%20this%20sweet%20bread%20so%20much%20easier.%3C/p%3E%3Cp%3EBecause%20I%20had%20leftover%20dough,%20I%20used%20aluminum%20foil%20to%20help%20the%20bread%20bake%20with%20a%20traditional%20opening.%20%20I've%20also%20read%20that%20you%20can%20shape%20the%20dough%20by%20wrapping%20it%20around%20a%20cake%20pan,%20then%20carefully%20remove%20the%20pan.%3C/p%3E%3Cp%3EI%20brushed%20the%20%22cake%22%20with%20an%20egg%20wash,%20and%20baked%20it%20for%20about%2040%20minutes--%20ten%20minutes%20longer%20than%20the%20recipe%20said.%20%20The%20difference,%20I%20think,%20is%20that%20this%20dough%20recipe%20makes%20two%20King%20Cakes,%20but%20this%20pan%20is%20quite%20generous,%20so%20I%20made%20one%20large%20King%20Cake.%3C/p%3E%3Cp%3EIt%20puffed%20up%20beautifully!%20%20I%20allowed%20it%20to%20cool,%20before%20glazing%20and%20decorating%20the%20King%20Cake.%3C/p%3E%3Cp%3EThe%20glaze%20is%20simply%20confectioner's%20sugar,%20lemon%20juice,%20milk%20and%20corn%20syrup.%3C/p%3E%3Cp%3ETo%20decorate%20with%20Mardis%20Gras%20colors,%20add%20the%20colored%20coarse%20sugar--%20and%20don't%20forget%20to%20push%20in%20the%20%20plastic%20baby%20through%20the%20bottom%20of%20the%20cake!%20Like%20the%20Biblical%20story,%20the%20%22search%20for%20the%20baby%22%20adds%20excitement,%20as%20each%20person%20waits%20to%20see%20in%20which%20slice%20of%20cake%20the%20baby%20will%20be%20discovered.%3C/p%3E%3Cp%3EWhile%20custom%20holds%20that%20the%20person%20who%20%22finds%22%20the%20baby%20will%20be%20rewarded%20with%20%22good%20luck%22,%20that%20person%20is%20also%20traditionally%20responsible%20for%20bringing%20the%20King%20Cake%20to%20the%20next%20party%20or%20gathering.%20%20This%20year's%20Fat%20Tuesday%20begins%20on%20February%2017th!%20%20So%20eat%20and%20enjoy,%20before%20Lent!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20This%20sweet%20bread%20dough%20was%20far%20from%20bland%20tasting.%20I%20found%20the%20dough%20was%20wonderful%20to%20handle--%20not%20too%20sticky,%20not%20too%20dry.%20%20It%20had%20a%20wonderful%20buttery%20flavor,%20and%20the%20cream%20cheese%20was%20subtle.%20%20That%20is,%20the%20filling%20baked%20into%20the%20brioche%20type%20dough,%20and%20wasn't%20super%20thick.%20%20I%20liked%20the%20crunch%20of%20the%20coarse%20sugar.%20%20I%20would%20make%20this%20again,%20and%20not%20necessary%20just%20for%20Mardis%20Gras.%20%20I%20would%20think%20I%20could%20shape%20this%20similar%20to%20my%20orange%20rolls%20and%20enjoy%20them%20that%20way.%3C/p%3E%3Cp%3ELaissez%20les%20bon%20temps%20roulez!%20Let%20the%20good%20times%20roll!%3C/p%3E){kind=link}
