  • 2/3 c. Nonfat Graham Cracker Crumbs
  • 2 Tbsp. Sugar
  • 1 Tbsp. Diet Stick Margarine Melted
  • 1/2 tsp Grnd Cinnamon Vegetable Cooking Spray
  • 16 ounce Neufchatel Cheese Softened
  • 16 ounce Fat-Free Cream Cheese Softened
  • 2 Tbsp. Cornstarch
  • 1/4 tsp Salt
  • 1 1/4 c. Maple Syrup
  • 3 lrg Egg Whites
  • 1/4 c. Minced Pecans Toasted
  • 1 x Pecan Halves Optional Flowering Mint Sprig Optional

  1. Preheat oven to 400F.Combine first four ingredients in a bowl; toss with a fork till blended.
  2. Press crumb mix into bottom of an 8-inch springform pan coated with cooking spray. Bake at 400 for 8 min. Cold on a wire rack.
  3. Combine cheeses, cornstarch, and salt in a large bowl; beat at high speed of mixer till smooth. Gradually add in maple syrup; heat well. Add in egg whites; beat just till well-blended. Preheat oven to 525 Pour half of cheese mix into prepared pan, and sprinkle with minced pecans. Top with remaining cheese mix. Bake at 525 for 7 min Reduce oven temperature to 200 , and bake an additional 45 min or possibly till almost set. Remove cheesecake from oven, and cold to room temperature. Cover and refrigerateat least 8 hrs. Garnish with pecan half and mint, if you like.
