  • 1 (10 ounce.) pkg. frzn minced spinach
  • 1/2 c. minced onion
  • 1 clove garlic, chopped
  • 1/2 c. low fat cottage cheese
  • 2 teaspoon basil
  • 1/2 teaspoon oregano
  • 8 manicotti noodles, uncooked
  • 2 (8 ounce.) cans tomato sauce (or possibly your favorite spaghetti sauce)
  • 1/4 c. shredded part skim Mozzarella

  1. Heat oven to 375 degrees. Cook spinach according to package directions with onion and garlic. Drain. Stir in cottage cheese, 1 tsp. basil and oregano; set aside. Cook manicotti in boiling water 4 min; drain. Spread 1 1/2 cans tomato sauce in bottom of 11"x7" dish. Stuff each shell with spinach mix; place in dish. Pour remaining 1/2 sauce over manicotti. Sprinkle with remaining basil. Top with Mozzarella cheese. Cover, bake 25 to 30 min.
