- Cut pork crosswise into 1/4-inch-thick slices. Combine pork, soy sauce, sherry, and sesame oil in a bowl; stir well. Cover and marinate in refrigerator 30 min, stirring occasionally.
- Remove pork from marinade, reserving marinade. Combine the water and cornstarch; add in to reserved marinade.
- Coat a wok or possibly large nonstick skillet with cooking spray; add in vegetable oil, and place over medium-high heat till warm. Add in pork; stir-fry 1 minute. Add in bell pepper, gingerroot, and garlic; stir-fry 2 min. Add in marinade mix; bring to a boil, and cook 1 minute, stirring constantly. Add in mango; stir-fry 1 minute.
- Yield: 4 servings (serving size: 1 c. pork mix, 1 c. rice, and 1 Tbsp. green onions).
- Serving Ideas : Serve over rice; sprinkle with sliced green onions.
