%20and%20quite%20capable%20of%20intimidating%20even%20the%20most%20experienced%20bakers.%20%20Of%20course%20I%20am%20speaking%20with%20experience.%20%20My%20own%20efforts%20landed%20with%20mixed%20results%20and%20I%20was%20beginning%20to%20hate%20the%20little%20things.%20%20This%20was%20only%20aggravated%20by%20the%20plethora%20of%20blogposts%20and%20pinterest%20posts%20from%20bakers%20and%20their%20dogs%20bragging%20about%20how%20easy%20they%20were%20to%20make%E2%80%A6It%20was%20time%20to%20take%20action%20and%20by%20action,%20I%20mean%20that%20it%20was%20time%20to%20get%20over%20my%20fear%20of%20failure%20(again)%20and%20to%20actually%20try%20making%20them.%20%20First%20I%20needed%20to%20find%20a%20better%20recipe%20and%20I%20did;%20Joanne%20Chang%20has%20a%20video%20tutorial%20and%20an%20article%20in%20Fine%20Cooking%20that%20explains%20making%20macarons%20in%20a%20way%20that%20simplifies%20the%20recipe%20and%20shows%20intimidation%20to%20the%20door!%3C/p%3E%3Cp%3EWhen%20made%20properly%20and%20that%20includes%20the%20filling,%20they%20are%20wonderful.%20%20Sadly%20though,%20most%20that%20I%20have%20tasted%20fall%20squarely%20into%20the%20%E2%80%9Cmeh%E2%80%9D%20category.%20%20Luckily,%20the%20recipe%20for%20the%20macarons%20also%20comes%20with%20recipes%20for%20fillings.%20%20To%20make%20mine,%20I%20added%20a%20little%20pink%20paste%20food%20color,%20after%20all,%20I%20was%20making%20these%20as%20Valentine%E2%80%99s%20Day%20gifts%20and%20then%20I%20filled%20them%20with%20raspberry%20paste%20and%20ganache.%20%20To%20make%20the%20cookies,%20follow%20the%20link%20for%20the%20recipe.%3C/p%3E%3Cp%3ESome%20hints%20to%20help!%20%20Do%20follow%20the%20cookie%20recipe,%20bring%20your%20laptop%20or%20tablet%20to%20the%20kitchen%20with%20you%20and%20watch%20it%20as%20you%20go;%20stop%20and%20rewind%20if%20you%20have%20to-I%20did!%20%20If%20I%20can%20only%20give%20you%20one%20hint,%20use%20a%20scale%20to%20measure.%20%20No%20arguments,%20go%20to%20the%20store%20and%20buy%20one%20if%20you%20do%20not%20have%20one.%20%20Seriously,%20they%20can%20be%20purchased%20for%20less%20than%20$20%20and%20I%20know%20this%20because%20I%20spent%20about%20$15%20on%20mine!!!%20%20The%20filling%20recipes%20make%20more%20than%20you%20need%20so%20you%20can%20make%20multiple%20batches%20of%20macarons%20now,%20use%20the%20fillings%20in%20another%20recipe%20or%20freeze%20them%20for%20another%20day.%3C/p%3E%3Cp%3ERaspberry%20paste:%20%20Place%206%20ounces%20of%20raspberries%20(thawed%20with%20the%20juices%20if%20using%20frozen)%20into%20a%20small%20sauce%20pot%20with%201/3%20cup%20sugar.%20%20Over%20medium-low%20heat,%20bring%20to%20a%20simmer.%20%20Mash%20the%20berries%20and%20continue%20to%20simmer%20until%20it%20thickens%20up%20a%20bit,%20about%2015%20minutes-reduce%20the%20heat%20to%20low%20if%20it%20looks%20like%20it%20is%20sticking%20before%20it%20thickens.%20%20Pour%20the%20mixture%20into%20a%20mesh%20strainer%20and%20press%20it%20through%20to%20remove%20the%20seeds.%20%20Do%20your%20best%20to%20extract%20as%20much%20of%20the%20fruit%20as%20possible.%20%20Discard%20the%20seeds%20and%20chill%20the%20paste.%20%20Once%20chilled,%20it%20will%20be%20a%20loose%20paste,%20nearly%20a%20jam%20in%20consistency.%3C/p%3E%3Cp%3EGanache:%20%20Place%206%20ounces%20of%20bittersweet%20chocolate%20into%20a%20heat%20proof%20bowl%20and%20set%20it%20over%20a%20pot%20of%20nearly%20simmering%20water%20to%20melt.%20%20In%20a%20small%20pot,%20heat(don%E2%80%99t%20boil,%20just%20heat%20it%20to%20help%20melt%20the%20chocolate)%203%20tablespoons%20of%20half%20and%20half%20with%202%20tablespoons%20of%20booze%20(I%20used%20Pennington%E2%80%99s%20Strawberry%20Rye%20but%20you%20can%20use%20what%20you%20like-or%20just%20use%20more%20half%20and%20half).%20%20Add%20the%20heated%20half%20and%20half%20and%20whisk%20until%20smooth.%20%20Let%20it%20sit%20until%20it%20has%20the%20consistency%20of%20mayonnaise.%3C/p%3E%3Cp%3ETo%20assemble%20the%20cookies,%20on%20one%20half%20of%20the%20cookies,%20spread%20a%20thin%20layer%20of%20the%20raspberry%20paste%20on%20the%20bottoms.%20%20Set%20each%20one,%20paste%20side%20up%20on%20a%20clean%20tray.%20%20On%20the%20other%20half%20of%20the%20cookies,%20spread%20about%20a%20teaspoon%20to%20a%20teaspoon%20and%20a%20half%20of%20the%20ganache%20over%20the%20bottom%20of%20the%20cookies.%20%20Pair%20the%20cookies%20together%20so%20that%20each%20has%20a%20raspberry%20and%20a%20chocolate%20cookie%20and%20gently%20press%20them%20together.%20%20Allow%20them%20to%20sit%20long%20enough%20for%20the%20ganache%20to%20completely%20set%20and%20then%20you%20can%20package%20them%20to%20give%20as%20gifts.%20%20Mine%20are%20rolled%20into%20clear%20cello%20with%20the%20ends%20tied%20shut.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
