.%3C/p%3E%3Cp%3EI%20also%20had%20a%20coffee%20with%20skim%20milk%20on%20campus.%3C/p%3E%3Cp%3EI%E2%80%99ve%20always%20loved%20the%20fact%20that%20our%20food%20court%20has%20a%20Spot%20Coffee%20and%20I%20learned%20more%20about%20that%20relationship%20today.%3C/p%3E%3Cp%3ELunch%20was%20eaten%20in%20the%20cafeteria.%20%20A%20Zucchini%20and%20Squash%20Blend%20with%20Vegetable%20Egg%20Frittata.%3C/p%3E%3Cp%3EPlus%20a%20skim%20milk/chocolate%20milk%20mix%20over%20ice.%3C/p%3E%3Cp%3EI%E2%80%99ve%20so%20missed%20the%20milk%20machine%20from%20my%20days%20of%20undergrad%20at%20UM!%3C/p%3E%3Cp%3EMy%20meal%20was%20delicious,%20by%20the%20way.%20%20The%20food%20service%20department%20here%20does%20a%20really%20amazing%20job%20of%20using%20tons%20of%20local%20sourced%20produce,%20dairy,%20and%20eggs.%20%20Plus%20they%20only%20buy%20cage-free%20eggs%20and%20antibiotic-free%20meat.%3C/p%3E%3Cp%3EWhen%20I%20got%20home%20in%20the%20afternoon%20I%20snacked%20on%20small%20bowls%20of%20leftovers.%3C/p%3E%3Cp%3ERice%20with%20spicy%20chicken.%20%20Followed%20by%20the%20last%20small%20serving%20of%20Tex-mex%20chicken%20soup.%3C/p%3E%3Cp%3EI%20am%20so%20sad%20to%20see%20this%20go!%20%20Especially%20because%20Adam%20said%20not%20to%20save%20the%20recipe%20because%20it%20was%20too%20spicy%20for%20him.%3C/p%3E%3Cp%3EDinner%20was%20pretty%20similar%20to%20my%20snacks,%20but%20Indian.%3C/p%3E%3Cp%3EI%20topped%20brown%20rice%20and%20roasted%20eggplant%20with%20a%20serving%20of%20Kohinoor%20India%20on%20a%20Platter%20Paneer%20Butter%20Masala.%3C/p%3E%3Cp%3EThis%20stuff%20was%20fabulous!%20%20My%20roasted%20eggplant%20wasn%E2%80%99t%20very%20good%20(I%20baked%20it%20in%20Worcestershire%20sauce%20and%20honey%20and%20it%20ended%20up%20spicy%20and%20chewy)%20but%20the%20sauce%20was%20totally%20able%20to%20carry%20it.%3C/p%3E%3Cp%3EIt%E2%80%99s%20close%20to%20bedtime%20but%20we%20are%20going%20to%20walk%20the%20dog%20and%20we%20may%20get%20some%20chocolate!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
