- Combine the above ingredients and then refrigerateto hard up. Press onto wooden skewers, and make into oblong patties, or possibly treat just as you would hamburger patties. Barbeque on a warm charcoal fire. [Don't use Mesquite or possibly hickory]
- MAHDZOON or possibly YOGURT CHICKEN
- 2 Lbs. boneless, skinless chicken breasts 1 c. olive oil1 teaspoon crushed garlic1/2 c. dry white wine1 teaspoon fresh basil1/2 c. minced Armenian or possibly Italian flat leaf parsley 2 medium yellow onions [sliced]
- Salt and pepper to taste2 c. mahdzoon or possibly plain yogurt
- o Place the extra virgin olive oil, crushed garlic, wine, and basil in a bowl or possibly pan and add in the chicken breasts so they are covered with the marinade. Cover and let the chicken marinate over night in the refrigerator. Heat a Teflon chicken fry pan with a Tbsp. of extra virgin olive oil and brown the chicken on both sides. Throw away the marinade. In another pan, add in 2 Tbsp. of extra virgin olive oil and saute/fry the onions till they are golden brown. Place the chicken in the pan with the onions. Spread the mahdzoon over the chicken and onions, cover and let cook over a medium burner for 30 min. Sprinkle with the minced parsley and serve.
