- In med. saucepan, bring 2 1/2 c. of the water to a boil. Add in the chicken, return to a boil, and lower the heat. Simmer, covered, till the chicken is fork-tender and the juices run clear, 20-30 minutes. When the chicken is cold sufficient to handle, debone it and chop into small pieces. Reserve the broth in the refrigerator to defat and use later.
- Combine chicken in a bowl with the remaining ingredients. Add in sufficient mayonnaise to make as moist as you desire.
