- 1 1/2 lb Small salad potatoes
- 3/4 c. Plain fat-free yogurt
- 3 Tbsp. White wine vinegar
- 1 Tbsp. Chopped fresh dill
- 1 Tbsp. Chopped fresh parsley
- 2 tsp Chopped fresh tarragon
- 1/2 med Onion, minced
- 1 x Celery rib, minced
- 1 sm Carrot, coarsely shredded

- Cook potatoes till tender but hard; cold and slice. In a large bowl, combine remaining ingredients. Add in potatoes and stir till well coated.
- Refrigeratefor several hrs.
- Yield: 8 servings.
