%20and%20has%20forced%20many%20of%20us%20to%20question%20our%20own%20blindness%20when%20it%20comes%20to%20racial%20inequality.%3C/p%3E%3Cp%3EFor%20me,%20that%20blindness%20is%20made%20manifest%20on%20my%20cookbook%20shelf.%20I%20have%20hundreds%20of%20cookbooks%20%E2%80%94%20five%20Inas,%20for%20crying%20out%20loud%20%E2%80%94%20and%20yet%20so%20few%20of%20my%20cookbooks%20are%20by%20people%20of%20color.%20It%E2%80%99s%20an%20embarrassing%20state%20of%20affairs,%20one%20that%20I%E2%80%99m%20in%20the%20process%20of%20remedying;%20after%20interviewing%20Samin%20Nosrat%20on%20Instagram%20Live,%20I%20immediately%20bought%20some%20of%20her%20new%20favorite%20cookbooks,%20including%20Maangi%E2%80%99s%20Big%20Book%20of%20Korean%20Cooking%20and%20Dishoom%20by%20Shamil%20Thakrar.%3C/p%3E%3Cp%3EBut%20no%20book%20as%20felt%20more%20important%20to%20me%20right%20now%20than%20Toni%20Tipton-Martin%E2%80%99s%20Jubilee.%3C/p%3E%3Cp%3EThis%20book%20is%20both%20an%20education%20and%20a%20celebration.%20Tipton-Martin%20seeks%20to%20explore%20the%20history%20of%20Black%20cooking%20in%20America,%20resurrecting%20recipes%20from%20over%20400%20cookbooks%20%E2%80%9Cdating%20to%201827,%20with%20themes%20that%20reflect%20not%20just%20Southern%20cooking%20or%20the%20soul%20food%20African%20Americans%20are%20known%20for%20and%20pigeonholed%20in,%20but%20immensely%20broad%20culinary%20interests%20and%20recipes.%E2%80%9D%3C/p%3E%3Cp%3ECase%20in%20point:%20the%20Louisiana%20Red%20Beans%20and%20Rice%20that%20I%20made%20last%20week%20inspired%20by%20Louis%20Armstrong%E2%80%99s%20favorite%20dish.%20Apparently,%20Louis%20Armstrong%20loved%20the%20dish%20so%20much%20he%20was%20known%20for%20the%20following%20salutation:%20%E2%80%9CRed%20beans%20and%20ricely%20yours.%E2%80%9D%3C/p%3E%3Cp%3ETraditionally%20made%20on%20Monday,%20using%20leftover%20ham%20bones%20from%20Sunday%20night%E2%80%99s%20dinner,%20I%20was%20lucky%20enough%20to%20have%20a%20smoked%20ham%20hock%20in%20my%20freezer%20from%20McCall%E2%80%99s%20Meat%20&%20Fish.%20Truthfully,%20I%20never%20quite%20knew%20what%20to%20do%20with%20the%20smoked%20ham%20hocks%20I%E2%80%99d%20been%20buying%20from%20there;%20I%20usually%20just%20threw%20them%20into%20a%20pot%20of%20beans%20and%20then%20discarded%20them.%20Foolish%20me!%20They%E2%80%99re%20wonderful,%20once%20cooked%20with%20the%20beans,%20chopped%20up%20and%20stirred%20back%20in.%3C/p%3E%3Cp%3EOtherwise,%20the%20rest%20of%20the%20ingredients%20are%20all%20grocery%20store%20staples%20(including%20the%20holy%20trinity%20of%20New%20Orleans%20cooking):%20celery,%20pepper,%20onion,%20plus%20red%20kidney%20beans,%20garlic,%20bay%20leaf,%20parsley,%20and%20green%20onions.%3C/p%3E%3Cp%3EThe%20resulting%20dish%20was%20both%20luxurious%20and%20clean-tasting.%20I%E2%80%99ve%20been%20making%20beans%20all%20Covid%20long,%20and%20usually%20I%20just%20throw%20in%20a%20whole%20onion%20and%20a%20head%20of%20garlic%20sliced%20in%20half%20and%20some%20other%20aromatics%20and%20let%20it%20simmer%20away;%20but%20here,%20you%20saut%C3%A9%20the%20vegetables%20first%20and%20then%20stir%20them%20into%20water%20with%20the%20soaked%20beans.%20The%20result%20was%20a%20revelation,%20the%20same%20way%20that%20Jubilee%20is%20a%20revelation.%3C/p%3E%3Cp%3EMake%20way,%20Ina.%20This%20cookbook%20shelf%20has%20a%20new%20star.%3C/p%3E%3Cp%3ELouisiana%20Red%20Beans%20and%20Rice%3C/p%3E%3Cp%3EFrom%20Toni%20Tipton-Martin's%20Jubilee,%20a%20comforting%20stew%20of%20kidney%20beans,%20vegetables,%20and%20%E2%80%94%20the%20key%20ingredient%20%E2%80%94%20a%20smoked%20ham%20hock.%3C/p%3E%3Cp%3EServings%206%20people%3C/p%3E%3Cp%3EIn%20a%20skillet,%20heat%20the%20bacon%20fat%20over%20medium-high%20heat.%20Add%20the%20chile%20pepper,%20onion,%20bell%20pepper,%20celery,%20and%20garlic%20and%20saut%C3%A9,%20stirring%20occasionally,%20until%20tender,%20about%206%20minutes.%3C/p%3E%3Cp%3EIn%20a%20medium%20pot,%20combine%208%20cups%20water,%20the%20saut%C3%A9ed%20vegetables,%20drained%20beans,%20bay%20leaf,%20and%20ham%20hocks.%20Stir%20to%20mix%20well.%20(I%20add%20a%20Tbs%20salt%20at%20this%20point,%20which%20is%20controversial,%20but%20I%20think%20it%20helps%20the%20beans%20have%20more%20flavor.)%20Bring%20to%20a%20boil%20over%20high%20heat,%20then%20reduce%20the%20heat%20to%20low,%20cover,%20and%20simmer%20for%202%20hours.%20Season%20with%20more%20salt%20and%20pepper%20and%20continue%20to%20cook%20until%20the%20beans%20are%20tender,%20about%201%20hour%20longer.%20Remove%20and%20discard%20the%20bay%20leaf.%3C/p%3E%3Cp%3ERemove%20the%20ham%20hocks%20or%20ham%20bone%20from%20the%20beans%20to%20a%20cutting%20board.%20When%20cool%20enough%20to%20handle,%20use%20a%20sharp%20knife%20to%20remove%20the%20meat%20from%20the%20bone%20and%20coarsely%20chop%20the%20meat%20(discard%20any%20skin,%20fat,%20and%20bones).%20Stir%20the%20meat,%20parsley,%20and%20green%20onions%20into%20the%20beans,%20taste%20and%20adjust%20seasonings%20with%20salt%20and%20pepper.%20Serve%20the%20beans%20and%20ham%20ove
