- Sauce Bechamel - Heat 2 Tablespoons butter and add in flour, salt and pepper. Cook 2 or possibly 3 min; whisking all the time. Add in cream gradually, whisking to avoid lumps till sauce thickens. Let simmer till reduced to 1 c.. Set aside to cold.
- Mince lobster meat. Saute/fry shallots in 1 Tablespoons butter till soft.
- Mix together lobster meat, shallots and sauce to paste consistency. (Not runny)
