Pork shoulder at Little Gem.
Imagine a restaurant, in which all the food is gluten-free. And dairy-free. And sans refined sugar.
No doubt, you’re probably fearing it also will be flavor-free and dismally low in satisfaction.
Not so. Not when it’s Little Gem in San Francisco, which opened in December.
After all, when the head chef is Dave Cruz, formerly of Thomas Keller’s Ad Hoc in Yountville, you’re guaranteed to be in good hands with the food, as I found out when I was invited in as a guest of the restaurant last week. %20instead%20%E2%80%94%20a%20smoothie%20whirled%20with%20avocado,%20cucumber,%20spinach,%20ginger%20and%20almond%20milk.%20Thick,%20rich%20and%20the%20color%20of%20Kermit,%20it%20tasted%20indulgent%20because%20of%20the%20body%20the%20avocado%20gave%20to%20it.%20It%E2%80%99s%20not%20your%20usual%20sweet%20fruit%20smoothie,%20but%20one%20that%E2%80%99s%20bordering%20on%20savory,%20especially%20with%20the%20gentle%20warmth%20of%20the%20ginger.%3C/p%3E%3Cp%3EIt%E2%80%99s%20green%20and%20it%E2%80%99s%20pretty%20dreamy.%3C/p%3E%3Cp%3EWe%20shared%20a%20few%20dishes,%20including%20two%20bowls.%20The%20Curried%20Cauliflower%20&%20Sweet%20Potato%20Rice%20Bowl%20($10.50)%20was%20mild%20and%20creamy,%20a%20comforting%20dish%20with%20big%20chunks%20of%20veggies%20and%20fluffy%20Carolina%20Gold%20rice.%20If%20you%20want%20more%20heat,%20there%E2%80%99s%20a%20bottle%20of%20housemade%20garlicky%20hot%20sauce%20at%20the%20table.%3C/p%3E%3Cp%3EVegetable%20curry.%3C/p%3E%3Cp%3ELittle%20Gem%20makes%20its%20own%20hot%20sauce.%20But%20of%20course.%3C/p%3E%3Cp%3ENot%20your%20ordinary%20rice%20and%20beans.%3C/p%3E%3Cp%3ELilavois%20recommended%20the%20Trumpet%20Mushrooms%20on%20Heirloom%20Beans%20&%20Rice%20($11),%20and%20I%E2%80%99m%20so%20glad%20he%20did%20because%20we%20almost%20didn%E2%80%99t%20order%20it.%20And%20what%20a%20shame%20that%20would%20have%20been%20because%20it%20was%20one%20of%20the%20biggest%20standouts%20of%20the%20night.%20Large%20slices%20of%20trumpet%20mushrooms%20almost%20stood%20in%20for%20meat%20with%20their%20substantialness%20and%20wonderful%20smoky%20flavor.%20Underneath%20was%20a%20mound%20of%20creamy%20beans,%20rice%20and%20Tuscan%20kale%20%E2%80%94%20all%20cooked%20up%20in%20a%20long-simmered%20tomato-bacon%20sauce%20that%20was%20a%20powerhouse%20of%20savoriness%20with%20a%20little%20hit%20of%20spice.%20Rice%20and%20beans%20may%20not%20sound%20sexy,%20but%20this%20dish%20sure%20sizzles.%20I%20could%20even%20imagine%20it%20rolled%20up%20in%20a%20tortilla%20for%20one%20unbelievable%20burrito.%3C/p%3E%3Cp%3EBesides%20bowls,%20there%20are%20also%20Chef%E2%80%99s%20Plates,%20which%20are%20larger%20entrees.%20The%20Tuscan%20Pork%20($19)%20brought%20out%20thick%20slabs%20of%20juicy%20slow-roasted%20shoulder%20with%20marble%20potatoes,%20pretty%20shavings%20of%20winter%20radishes,%20and%20beet%20marmalade%20dotting%20the%20plate%20like%20a%20Jackson%20Pollock%20painting%20and%20adding%20a%20subtle%20sweet,%20earthy%20accompaniment.%20It%E2%80%99s%20a%20bargain%20for%20the%20price.%3C/p%3E%3Cp%3EThe%20101%20Chicken%20($21)%20had%20lovely%20burnished%20skin%20and%20moist%20meat%20not%20only%20in%20the%20thigh,%20but%20the%20breast.%20Underneath%20was%20a%20mound%20of%20mixed%20rice%20that%20had%20some%20nice%20crisp%20bits%20to%20it,%20reminding%20us%20almost%20of%20a%20wild%20rice%20Thanksgiving%20stuffing.%20Mushroom%20ragu%20and%20a%20garnish%20of%20fresh%20spring%20pea%20sprouts%20made%20this%20a%20nice,%20complete%20dish.%3C/p%3E%3Cp%3EJuicy%20roasted%20chicken.%3C/p%3E%3Cp%3ENew%20Zealand%20salmon.%3C/p%3E%3Cp%3EKing%20of%20Hayes%20($23)%20delivers%20a%20thick%20piece%20of%20New%20Zealand%20sustainably,%20farm-raised%20Ora%20King%20salmon%20seared%20with%20a%20golden%20crust%20along%20with%20red%20quinoa%20made%20more%20exciting%20with%20mixed%20with%20almonds%20and%20kalamata%20olives%20with%20a%20drizzle%20of%20lemon%20scallion%20vinaigrette.%3C/p%3E%3Cp%3EFor%20dessert,%20there%E2%80%99s%20a%20vibrant,%20deeply%20lemony%20custard%20in%20a%20cute%20little%20glass%20jar%20that%20gets%20topped%20with%20glazed%20blackberries%20and%20toasted%20oat%20crumble.%20Coconut%20milk%20and%20a%20little%20arrowroot%20give%20the%20custard%20its%20silky%20texture.%3C/p%3E%3Cp%3ELemon%20custard.%3C/p%3E%3Cp%3EQuinoa%20raspberry%20date%20cake.%3C/p%3E%3Cp%3ELittle%20Gem%20also%20offers%20a%20few%20baked%20goods%20such%20as%20quinoa%20raspberry%20date%20cake%20($4.50),%20chocolate%20chunk%20cookies%20($3),%20and%20a%20small%20coconut%20cocoa%20bar%20($2).%20This%20is%20where%20you%20might%20notice%20the%20real%20difference.%20They%20lack%20the%20powerfully%20sweet,%20ooey-gooey%20nature%20of%20traditional%20baked%20goods,%20and%20sport%20a%20crumblier,%20drier%20(though%20not%20dry%20tasting)%20texture.%20Instead%20the%20bitterness%20of%20the%20chocolate%20is%20at%20the%20forefront%20in%20the%20cookie%20and%20bar.%20But%20that%E2%80%99s%20not%20a%20bad%20thing.%20It%20just%20calls%20for%20recalibrating%20your%20taste%20buds%20to%20accept%20something%20a%20little%20more%20austere.%3C/p%3E%3Cp%3EYou%20definitely%20don%E2%80%99t%20feel%20deprived%20in%20any%20way%20here.%20As%20Cruz%20explained,%20%E2%80%9CWe%20want%20to%20make%20food%20that%20tastes%20good%20first%20and%20foremost.%E2%80%9D%3C/p%3E%3Cp%3EFrom%20all%20accounts,%20they%20have%20justly%20succeeded.%3C/p%3E%3Cp%3EOther%20Places%20to%20Check%20Out%20In%20The%20Area:%20Rich%20Table%3C/p%3E%3Cp%3EAnd:%20Absinthe%20Brasserie%3C/p%3E%3Cp%3EAnd:%20Boxing%20Room%3C/p
