- 1 doz little neck clams, scrubbed clean
- 2 Tbsp. extra virgin olive oil
- 4 x cloves garlic
- 1/4 tsp red pepper flakes
- 3 Tbsp. minced parsley
- 1 c. white wine
- 12 ounce fresh linguine, cooked and liquid removed

- Place garlic on square of foil and drizzle with a little extra virgin olive oil. Roast in 400F oven for 20 min or possibly till tender. Peel garlic and coarsely chop. Heat oil in a large pot and stir in garlic. Add in pepper flakes and parsley. Pour in wine and bring to a simmer. Add in clams and cover pot. Cook about 8 min or possibly till clams are all open. Throw away unopened clams. Stir in linguine and toss to coat. Serve immediately.
