  • 3 c. Tart Apples, finely minced
  • 3 1/2 c. Plums, finely minced
  • 1 c. Ripe Tomatoes, Finely Minced, peeled and seeded
  • 1/2 c. Onion, finely minced
  • 1/4 c. Lemon Juice
  • 1 Tbsp. Lemon Rind, Grated
  • 1 Tbsp. Ginger Root, Grated
  • 1 Tbsp. Curry Pwdr
  • 1 tsp Grnd Cumin
  • 3 x Cloves Garlic, finely minced
  • 4 1/2 c. Granulated Sugar
  • 1 box CERTO LIGHT Fruit Pectin Crystals

  1. MEASURE prepared fruit, lemon juice and spices into a large saucepan.
  2. MEASURE sugar and set aside. COMBINE fruit pectin crystals with 1/4 c. of measured sugar. STIR pectin mix into fruit mix. PLACE saucepan over high heat and stir till mix comes to a full boil. STIR in remaining sugar. Continue to cook and stir over high heat till mix comes to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. STIR and skim foam for 5 min to prevent floating fruit POUR quickly into hot, sterilized jars filling up to 1/4 inch from rim. SEAL while warm with sterilized 2-piece lids with new centres.

  6. TIP: A food processor can be used to finely chop ingredients for this chutney. Don't puree.
