  • 1 c. all-purpose flour
  • 1 c. whole wheat flour
  • 1/3 c. wheat germ
  • 1/4 c. firmly packed brown sugar
  • 1 tsp baking pwdr
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp grnd cinnamon
  • 1/4 tsp grnd nutmeg
  • 2 x Large eggs, beaten
  • 1/4 c. skim lowfat milk
  • 1/4 c. vegetable oil
  • 2 c. peeled, shredded apple
  • 1 Tbsp. grated lemon rind Cooking spray

Инструкции

  1. Combine flours, wheat germ, brown sugar, baking pwdr, soda, salt, cinnamon, and nutmeg in a large bowl; make a well in the center of mix. Combine Large eggs, lowfat milk, and oil; add in to dry ingredients, stirring just till moistened. Stir in apple and lemon rind. Spoon into muffin pans coated with cooking spray, filling 2/3 full. Bake at 400 degrees F. for 10 to 12 min.
  2. Yield: 1 1/2 dozen.
