%20and%20I%20loved%20it.%20There%20is%20no%20%22last%20one%20picked%22%20for%20figure%20skating.%20There%20are%20no%20balls%20to%20bounce%20off%20one's%20head;%20there%20is%20just%20the%20cold%20unforgiving%20ice.%20When%20I%20was%20in%20my%20late%20teens%20I%20started%20downhill%20skiing%20and%20also%20did%20pretty%20well%20with%20that.%20Then%20just%20as%20suddenly%20as%20I%20started,%20I%20stopped.%20No%20more%20skating,%20no%20more%20skiing.%20I%20started%20running%20and%20writing%20and%20cooking.%20But%20even%20though%20the%20closest%20I've%20been%20to%20ice%20since%20then%20has%20been%20my%20fridge,%20I%20still%20have%20a%20weakness%20for%20all%20the%20winter%20sports.%20It's%20the%20one%20Olympics%20that%20actually%20makes%20me%20feel%20like%20an%20athlete!%3C/p%3E%3Cp%3ENaturally%20I've%20been%20waiting%20the%20last%20week%20and%20a%20half%20for%20the%20ladies%20figure%20skating%20finals.%20I%20wanted%20to%20plop%20down%20in%20front%20of%20the%20TV%20and%20just%20enjoy.%20Of%20course%20while%20enjoying%20I%20had%20to%20have%20a%20treat.%3C/p%3E%3Cp%3EI%20wanted%20something%20light,%20airy,%20but%20with%20a%20twist.%20I%20wanted%20%20the%20triple%20lutz%20triple%20toe%20loop%20of%20desserts.%20%20I%20also%20wanted%20to%20work%20with%20what%20I%20had%20in%20the%20house,%20lazy%20slug%20that%20I%20am.%3C/p%3E%3Cp%3EI%20had%20milk,%20I%20had%20apples%20and%20a%20whole%20lot%20of%20Indian%20spices.%20%20I%20decided%20to%20make%20a%20Kashmiri%20Apple%20Pudding,%20better%20known%20as%20Apple%20Kheer.%3C/p%3E%3Cp%3EThere%20are%20a%20lot%20of%20recipes%20for%20this%20dish%20out%20there.%20Most%20of%20them%20basically%20the%20same%20with%20a%20few%20slight%20alterations%20according%20to%20ones'%20taste,%20and%20in%20my%20case,%20what%20happened%20to%20%20be%20on%20hand.%3C/p%3E%3Cp%3EI%20started%20out%20with%202%20lbs%20of%20apples.%20Granny%20smith%20apples%20to%20be%20exact.%20they're%20a%20crisp%20semi-%20tart%20green%20apple%20which%20cook%20up%20great%20.%20Peeled,%20core%20and%20dice%20the%20apples%20and%20put%20them%20in%20a%20kadhai%20or%20pot%20with:%3C/p%3E%3Cp%3EPut%20the%20apples%20on%20a%20medium%20heat%20and%20simmer%20them%20for%20about%2010%20minutes%20or%20until%20they're%20just%20this%20side%20of%20soft.%20They%20shouldn't%20be%20too%20mushy,%20%20they%20should%20still%20maintain%20their%20shape.%3C/p%3E%3Cp%3EIn%20a%20separate%20clay%20pot%20or%20other%20deep%20vessel%20put%3C/p%3E%3Cp%3E4.)%206%20cups%20of%20whole%20milk%3C/p%3E%3Cp%3EBring%20the%20milk%20to%20a%20boil,%20then%20turn%20down%20the%20heat%20and%20simmer%20well%20for%20about%201%20hour.%20Check%20in%20every%20now%20and%20again%20and%20give%20it%20a%20nice%20stir%20with%20a%20wooden%20spoon.%20In%20an%20hour,%20the%20milk%20will%20have%20reduced%20down%20to%20about%202%20cups.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl%20soak%201%20tsp%20of%20toasted%20crumbled%20saffron%20in%202%20Tbs%20of%20warm%20%20milk.%3C/p%3E%3Cp%3EAdd%20this%20mixture%20to%20the%20clay%20pot%20of%20boiled%20down%20milk%20along%20with%3C/p%3E%3Cp%3E5.)%201/2%20cup%20of%20sugar%3C/p%3E%3Cp%3E6.)%201%20tsp%20of%20ground%20cardamom%3C/p%3E%3Cp%3EStir%20it%20all%20well.%20Add%20in%20the%20apple%20mixture%20and%20keep%20stirring%20till%20it's%20warmed%20through.%3C/p%3E%3Cp%3ETake%20the%20pudding%20off%20the%20fire%20and%20add%20in%3C/p%3E%3Cp%3E7.)%201%20tsp%20of%20rose%20water%3C/p%3E%3Cp%3EGive%20it%20another%20good%20stir%20then%3C/p%3E%3Cp%3ETransfer%20the%20pudding%20to%20a%20metal%20bowl%20and%20chill%20it%20in%20the%20fridge%20for%20several%20hours.%3C/p%3E%3Cp%3EI%20served%20it%20with%20a%20few%20mint%20leaves%20%20and%20a%20bit%20of%20sirkhand%20flavored%20with%20saffron%20and%20sugar.%20I%20should%20have%20also%20sprinkled%20some%20chopped%20fresh%20pistachios%20on%20top%20but%20the%20skaters%20were%20coming%20on%20and%20I%20also%20forgot.%20I%20bet%20it%20would%20have%20been%20good%20though.%20Oh%20well,%20maybe%20next%20time.%3C/p%3E){kind=link}
