%20Absurd,%20yes,%20but%20there%20it%20is.%3C/p%3E%3Cp%3ESo%20our%20little%20Japanese%20apartment%20was%20obviously%20warm,%20but%20we%20had%20several%20fans%20going%20that%20made%20it%20bearable.%20I%20thought%20that%20lettuce%20wraps%20might%20be%20a%20good%20meal%20for%20a%20hot%20evening.%20I%20washed%20the%20lettuce%20leaves%20then%20got%20the%20%E2%80%9Cbrilliant%E2%80%9D%20idea%20(blame%20the%20heat?)%20to%20throw%20them%20in%20the%20freezer%20for%20a%20minute%20to%20keep%20them%20cold%20while%20we%20set%20the%20table.%20Ha.%20You%20know%20what%20happens%20when%20you%20put%20lettuce%20in%20the%20freezer?%20All%20the%20moisture%20in%20the%20leaves%20freezes%20almost%20immediately,%20and%20then%20when%20you%20take%20them%20out,%20they%20defrost%20immediately,%20leaving%20you%20with%20pathetic%20wilty%20leaves.%20Awesome.%20I%20can%E2%80%99t%20believe%20I%20just%20told%20that%20story.%20That%20night%20we%20enjoyed%20the%20lettuce%20wrap%20filling%20on%20its%20own,%20and%20I%20think%20I%20made%20some%20steamed%20rice%20to%20go%20with%20it.%20Needless%20to%20say,%20I%20never%20blogged%20about%20lettuce%20wraps.%20And%20we%20might%20have%20broken%20down%20and%20turned%20on%20the%20air%20conditioner.%3C/p%3E%3Cp%3EThis%20time%20around%20we%20were%20much%20more%20successful,%20and%20since%20we%20live%20in%20Santa%20Cruz%20and%20most%20houses%20don%E2%80%99t%20even%20have%20air%20conditioners,%20we%E2%80%99ll%20never%20play%20that%20ridiculous%20game%20again.%20%20Leaves%20from%20a%20beautiful%20head%20of%20red%20leaf%20lettuce%20remained%20in%20the%20refrigerator%20until%20dinner%20time%20and%20were%20perfectly%20crisp%20and%20ready%20to%20be%20filled%20with%20seasoned%20pork,%20bright%20green%20cilantro,%20crunchy%20chow%20mein%20noodles%20(from%20a%20can,%20yes,%20but%20oh%20so%20good),%20peanuts,%20and%20plenty%20of%20Sriracha%20to%20spice%20it%20all%20up.%3C/p%3E%3Cp%3ELettuce%20Wraps%20with%20Pork,%20Cilantro,%20Crunchy%20Chow%20Mein%20Noodles,%20Peanuts%20&%20Sriracha%3C/p%3E%3Cp%3EAdd%20the%20canola%20oil%20and%20sesame%20oil%20to%20a%20large%20skillet%20and%20heat%20over%20medium%20high%20heat.%20Add%20the%20ground%20pork%20and%20cook%20until%20no%20longer%20pink,%20using%20a%20wooden%20spoon%20to%20break%20up%20the%20meat.%20If%20there%20is%20any%20fat,%20drain%20with%20a%20spoon.%20Return%20skillet%20to%20medium%20heat.%20Add%20the%20garlic,%20ginger%20and%20cook%20for%20several%20minutes,%20stirring%20frequently.%20Add%20the%20green%20onions%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20soy%20sauce,%20mirin,%20rice%20vinegar,%20oyster%20sauce,%20peanut%20butter,%20and%20agave%20nectar.%20Taste%20and%20adjust%20ingredients%20as%20necessary.%20These%20lettuce%20wraps%20are%20very%20adaptable%20to%20your%20tastes!%3C/p%3E%3Cp%3EAdd%20the%20sauce%20to%20the%20pork%20mixture%20and%20cook%20over%20medium%20high%20heat,%20stirring,%20until%20it%20reduces%20slightly%20and%20incorporates%20into%20the%20meat.%3C/p%3E%3Cp%3ETransfer%20the%20pork%20mixture%20to%20a%20serving%20bowl.%20Place%20your%20lettuce%20leaves%20on%20a%20serving%20platter.%20Put%20the%20cilantro,%20chow%20mein%20noodles,%20and%20peanuts%20in%20little%20bowls%20and%20place%20everything%20on%20the%20table%20for%20everyone%20to%20serve%20themselves.%20Don%E2%80%99t%20forget%20the%20bottle%20of%20Sriracha!%3C/p%3E%3Cp%3ETo%20go%20with%20our%20lettuce%20wraps,%20I%20used%20a%20vegetable%20peeler%20to%20make%20shavings%20of%20daikon%20(Japanese%20white%20radish)%20and%20carrot,%20tossed%20with%20a%20little%20sesame%20oil,%20rice%20wine%20vinegar,%20sugar%20&%20salt%20to%20taste,%20and%20a%20sprinkling%20of%20black%20sesame%20seeds.%3C/p%3E){kind=link}
