For this recipe you also need a large (2-3 litre) glass jar with a sealed lid. The jar should be washed and rinsed very well or sterilized. %20glass%20jar%20with%20a%20sealed%20lid.%20The%20jar%20should%20be%20washed%20and%20rinsed%20very%20well%20or%20sterilized.%20You%20don't%20want%20anything%20in%20your%20lemoncello%20but%20what%20you%20put%20there.%20So%20my%20lemoncello%20story%20continues......%20I%20went%20to%20the%20ABC%20store%20looking%20for%20the%20Everclear%20that%20is%20used%20in%20the%20recipe.%20I%20found%20out%20that%20Virginia%20does%20not%20sell%20Everclear.%20So,%20I%20contemplated%20using%20vodka,%20until%20a%20friend%20told%20me%20that%20they%20sell%20it%20in%20North%20Carolina.%20North%20Carolina%20is%20an%20hour%20drive%20from%20my%20home.%20So%20while%20we%20were%20on%20vacation%20in%20North%20Carolina,%20I%20purchased%20a%20bottle%20of%20Everclear.%20I%20made%20a%20batch.%20I%20put%20it%20in%20the%20jar%20pictured%20below%20and%20set%20it%20in%20my%20closet%20shelf.%20Every%20week%20or%20so%20I%20would%20shake%20and%20stir%20it%20around.%20Well,%20around%20the%20fourth%20week%20I%20noticed%20that%20most%20of%20my%20lemoncello%20was%20gone.%20I%20realized%20that%20it%20all%20leaked%20out%20at%20the%20spout.%20Just%20letting%20you%20know,%20NEVER%20use%20a%20spout%20jar%20for%20Lemoncello.%20Well%20now%20I%20am%20thinking%20I%20better%20go%20and%20get%20some%20Vodka%20and%20start%20all%20over.%20The%20Mr.%20surprised%20me%20and%20took%20a%20drive%20down%20to%20North%20Carolina.%20He%20picked%20me%20up%20a%20bottle%20and%20brought%20it%20back%20home.%3C/p%3E%3Cp%3EYou%20will%20also%20need%20the%20bottles%20you%20want%20to%20put%20the%20final%20brew%20in.%20You%20can%20get%20this%20from%20any%20home%20brew%20store%20or%20on%20line.%3C/p%3E%3Cp%3EI%20use%20a%20three-step%20process.%3C/p%3E%3Cp%3EStep%201:%20lemon%20in%20alcohol%3C/p%3E%3Cp%3EWash%20and%20dry%20the%20lemons.%20Only%20use%20the%20ones%20without%20blemished%20peels%20or%20pare%20off%20any%20spots%20and%20the%20stems,%20ends.%3C/p%3E%3Cp%3ERemove%20the%20peel%20from%20the%20lemons%20with%20a%20sharp%20peeler%20or%20fine%20grater/zester,%20carefully%20avoiding%20the%20bitter%20white%20pith.%20If%20you%20choose%20to%20peel%20your%20lemons,%20please%20note%20that%20if%20any%20white%20pith%20remains%20on%20the%20back%20of%20a%20strip%20of%20peel,%20scrape%20it%20off.%20If%20you%20get%20any%20of%20the%20white%20part%20in%20the%20batch,%20the%20limoncello%20will%20be%20bitter%20and%20you%20don't%20want%20that!%3C/p%3E%3Cp%3EPut%20the%20peels%20in%20a%20glass%20jar%20and%20add%20the%20vodka%20and/or%20Everclear,%20leaving%20at%20least%20two%20inches%20below%20the%20top%20rim.%20Seal%20tightly.%3C/p%3E%3Cp%3ELeave%20the%20lemons%20to%20steep%20in%20the%20jar%20in%20a%20cool,%20dark%20place%20until%20the%20peels%20lose%20their%20color,%20at%20least%202%20weeks.%20I%20leave%20mine%20for%20at%20least%202-3%20months.%20(That's%20why%20mine%20is%20extra%20yummy).%20Every%20couple%20of%20weeks%20I%20swirl%20the%20peels%20around%20in%20the%20jar%20to%20mix%20up%20the%20oils%20in%20the%20alcohol,%20plus%20I%20don't%20know%20if%20that%20helps,%20I%20just%20like%20to%20check%20in%20on%20it!%3C/p%3E%3Cp%3EStep%202:%20make%20the%20simple%20syrup%20and%20add%20it.%3C/p%3E%3Cp%3EPut%20the%20water%20and%20sugar%20in%20a%20saucepan,%20stir%20and%20slowly%20heat%20until%20it%20turns%20clear%20and%20all%20the%20sugar%20is%20dissolved%20completely.%20Let%20the%20syrup%20cool.%3C/p%3E%3Cp%3EPut%20the%20cooled%20syrup%20in%20the%20jar%20with%20the%20lemons%20(you%20might%20have%20to%20divide%20the%20batch%20into%20two%20jars%20at%20this%20point,%20depending%20on%20the%20size%20of%20your%20jar).%3C/p%3E%3Cp%3EPut%20the%20jars%20back%20in%20the%20closet%20for%20at%20least%20two%20weeks.%20Longer%20is%20fine%20too.%3C/p%3E%3Cp%3EStep%203:%20strain%20and%20bottle%3C/p%3E%3Cp%3EStrain%20out%20the%20lemon%20peels%20through%20a%20coffee%20filter%20or%20cheesecloth%20and%20pour%20the%20limoncello%20into%20another%20container.%20Press%20down%20to%20remove%20all%20the%20vodka%20and%20oils%20that%20you%20can%20from%20the%20peels%20before%20tossing%20them%20in%20the%20trash.%3C/p%3E%3Cp%3EStir%20the%20liquid%20with%20a%20clean%20plastic%20or%20wooden%20spoon.%3C/p%3E%3Cp%3EPut%20the%20liqueur%20in%20clean%20bottles,%20seal%20tightly%20and%20leave%20the%20finished%20bottles%20for%20at%20least%201%20week%20before%20using.%20I%20told%20you%20that%20I%20use%20making%20limoncello%20as%20an%20exercise%20in%20practicing%20patience!%3C/p%3E%3Cp%3ELemoncello%20should%20be%20in%20your%20freezer%20with%20the%20other%20staples!For%20best%20flavor%20and%20drinking%20it%20straight,%20store%20the%20limoncello%20in%20your%20freezer.%20It%20shouldn't%20freeze%20because%20of%20how%20much%20alcohol%20is%20in%20it%20and%20it%20is%20simply%20lovely%20ice%20cold.%3C/p%3E){kind=link}
