%3C/p%3E%3Cp%3EThankfully,%20my%20mom-in-law,%20Liz,%20has%20near%20endless%20patience%20for%20her%20grandson%20and%20she%20and%20I%20took%20turns%20sitting%20in%20the%20backseat%20and%20trying%20to%20him%20from%20screaming%20BY%20ANY%20MEANS%20POSSIBLE!%20%20At%20one%20point,%20this%20included%20wiping%20his%20tiny%20feet%20repeatedly%20with%20some%20Wet%20Wipes%20we%20found%20on%20the%20floor%20of%20the%20car%20(don't%20ask%20me%20why%20this%20would%20work%20-%20the%20important%20thing%20is%20that%20it%20did%20get%20him%20to%20stop%20crying%20for%20a%20few%20minutes.)%3C/p%3E%3Cp%3EAnd%20the%20drive%20was%20not%20all%20bad,%20of%20course.%20The%20scenery%20was%20uniquely%20beautiful%20-%20I%20am%20always%20awestruck%20by%20how%20gorgeous%20the%20North%20Country%20farmland%20is.%20On%20our%20way%20back%20to%20New%20York,%20we%20stopped%20at%20a%20farm%20and%20bought%20a%20little%20tub%20of%20fresh%20sheep's%20milk%20ricotta%20cheese.%3C/p%3E%3Cp%3EI%20don't%20usually%20wax%20poetic%20about%20cheese%20but%20this%20one%20was%20kind%20of%20special%20-%20pure%20white%20and%20so%20soft%20-%20it%20made%20me%20think%20of%20angels%20and%20sleeping%20newborn%20babies.%3C/p%3E%3Cp%3EWhen%20we%20got%20back%20to%20my%20in-laws'%20house,%20there%20was%20a%20ton%20of%20Swiss%20chard%20begging%20to%20be%20picked%20in%20the%20garden.%3C/p%3E%3Cp%3EI%20thought%20it%20would%20be%20tasty%20to%20sautee%20some%20chard%20with%20onions%20and%20garlic,%20then%20mix%20it%20with%20the%20pasta,%20throw%20in%20gobs%20of%20this%20amazing%20cheese%20and%20top%20with%20some%20pinenuts,%20basil%20and%20a%20healthy%20dose%20of%20lemon%20zest.%3C/p%3E%3Cp%3EI%20was%20right,%20it%20was%20dee-li-cious!%3C/p%3E%3Cp%3EI%20found%20some%20similarly%20tasting-looking%20fresh%20ricotta%20recently%20and%20decided%20to%20recreate%20this%20meal.%20I%20served%20it%20in%20this%20great%20big%20pasta%20bowl%20I%20got%20at%20a%20yardsale%20years%20ago%20when%20we%20lived%20in%20Washington,%20DC.%20I%20love%20its%20gentle%20curves,%20subtle%20crackle%20glaze%20and%20the%20fact%20that%20it%20was%20actually%20made%20in%20Italy.%3C/p%3E%3Cp%3EI%20don't%20remember%20much%20about%20the%20yardsale%20other%20than%20that%20it%20was%20in%20our%20old%20'hood,%20Adams%20Morgan,%20but%20I%20like%20to%20think%20that%20an%20Italian%20diplomat%20was%20unloading%20some%20belongings%20before%20moving%20on%20to%20his%20next%20posting%20in%20some%20exotic%20locale.%20A%20more%20likely%20scenario%20is%20that%20some%20college%20kid%20bought%20it%20at%20Bed%20Bath%20&%20Beyond%20but%20I%20prefer%20my%20story%20--%20much%20more%20romantic.%3C/p%3E%3Cp%3EHappy%20Summer!%3C/p%3E%3Cp%3ELemon-Scented%20Pasta%20With%20Swiss%20Chard%20&%20Ricotta%3C/p%3E%3Cp%3EServes%204-6%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Bring%20a%20large%20pot%20of%20water%20to%20boil%20for%20the%20pasta%20-%20once%20it%20boils%20add%20the%20pasta%20and%20cook%20until%20al%20dente.%3C/p%3E%3Cp%3E2.%20Meanwhile,%20heat%202%20Tbsps%20olive%20oil%20in%20a%20wide%20saucepan%20over%20medium%20heat.%20Once%20hot,%20add%20red%20pepper%20flakes,%20onions%20and%20chard%20ribs%20and%20sautee%20for%20around%204%20minutes,%20stirring%20frequently%20until%20the%20onions%20become%20translucent.%20Add%20the%20garlic%20and%20sautee%20another%202%20minutes%20or%20until%20the%20garlic%20becomes%20fragrant.%20Toss%20in%20the%20chard%20greens,%20stirring%20well%20to%20combine%20with%20the%20hot%20mixture%20in%20the%20pan,%20and%20sautee%20until%20wilted%20and%20bright%20green%20-%20another%202-3%20minutes.%20Turn%20off%20the%20heat%20and%20set%20aside.%3C/p%3E%3Cp%3E3.%20Drain%20the%20cooked%20pasta,%20rinse%20quickly%20with%20cold%20water,%20then%20return%20to%20the%20pot%20or%20place%20in%20whatever%20serving%20dish%20you%20plan%20to%20use%20and%20toss%20with%20a%20tablespoon%20of%20olive%20oil.%3C/p%3E%3Cp%3E4.%20Add%20the%20chard%20mixture%20to%20the%20pasta%20and%20toss%20to%20combine.%20Top%20with%20the%20ricotta%20cheese,%20lemon%20zest,%20basil%20and%20pinenuts.%20Season%20with%20salt%20and%20pepper%20to%20taste%20and%20serve.%3C/p%3E){kind=link}
