  • 2 cups shallots, minced
  • 1/2 cup garlic, minced
  • 2 cups dry white wine
  • 2 cups fresh lemon juice
  • 1/2 cup fresh dill, chopped, remove from stem
  • 2 Tbsp dijon mustard
  • 2 cups heavy cream
  • 8 oz butter, unsalted, cut into cubes
  • salt and pepper

  1. In a saucepan, combine the shallots, garlic, wine, and lemon. Bring the liquid up to a boul.
  2. Stir in the dill and cook for 3 minutes.
  3. Whisk in the mustard and cream, continue to cook for 2 minutes.
  4. Whisk in the butter one cube at a time, until all the butter is incorporated.
  5. Season with salt and pepper.
