- 2 cups flour
- 1 t baking soda
- 1/2 t salt
- 3/4 cup butter, room temperature
- 1/2 cup sugar
- 1/4 cup light brown sugar, packed
- 1 large egg
- 1 t lemon extract
- 2 cups lemon chips
- Preheat oven to 350°
- Line a baking sheet with parchment paper
- In a small bowl
- Stir together flour, baking soda and salt
- Set aside
- In a large bowl
- Cream together sugar, brown sugar, butter and
- lemon extract with an electric mixer
- Until light and fluffy
- Beat in egg
- Add the flour mixture and
- Stir just until combined
- Fold in lemon chips
- Roll dough into 1 inch balls
