Berries, berries, berries….

we love berries over here!

me last month, I did not hesitate to turn them

down.

When you purchase a bag of Wyman's berries,

you are not only purchasing the best of the best in

frozen fruit, you are also helping to make a difference

in the world, both with people and within the environment.

Not only are they one of the world's largest importers

of frozen berries in North America,

they also pride themselves in sustainability for

people and for the planet.

With honey bees being one of the reason's Wyman's

is thriving, they believe in the sanctity of saving the

world's population of bees, with their motto

being, "No Bees, No Blueberries."

They also believe in helping and aiding the

community, with financially supporting

causes such as Tsunami Relief

and the Women's Health Resource Library.

In 2010, they adopted a wellness campaign for their employees

in which participants were given incentives if they lost weight,

started exercising, and stopped smoking.

All of their full and part time employees also receive

turkeys every Thanksgiving and in 2011,

they contributed $80,000 to a Fuel Assistance

Program for all of their employees.

Besides being just an awesome company to

work for, their berries are also to-die-for

good. This recipe will prove it to you!

It's what you get when you combine homemade

lemon curd with a different assortment

of berries.

I chose to work with their mixed berries selection:

….and they did not disappoint!

The berries were fresh out of the bag and worked well

with this recipe. They tasted just as wonderful as they

looked too.

We will definitely start purchasing Wyman's in the

future!

Who's up for dessert?? :)

(makes 6 individual tarts)

Ingredients:

Directions:

1. Bake premade puff pastry shells as directed on package. Let cool.

2. Combine the sugar, eggs, lemon juice, zested lemons, and butter in a small saucepan.

3. On medium heat, while whisking constantly, cook the sugar/lemon mixture until thick enough to coat the back of a spoon, around 5-10 minutes. Let cool.

4. Cut out the circles in the baked puff pastry shells and fill the cooled lemon curd inside each hole.

5. Top with an assortment of mixed berries.

**Libby's Notes: Garnish with powdered sugar and/or whipped cream if desired. You can also use fresh fruit. Not a fan of lemon curd? Try using pudding or whipped cream in it's place.
