Big six-inch cookies
Ингредиенты
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1 cup sugar
- 1 large egg
- 1 tsp grated lemon zest
- 1 3/4 cups flour
- 1/8 tsp salt
- 1 tsp baking powder
- 3 tbsp fresh lemon juice
- 1/4 cup sliced almonds
Инструкции
- In a large bowl, cream the butter and sugar until smooth
- Beat in the egg and lemon zest until the mixture is light and fluffy
- Mix the flour, salt, and baking powder in another bowl
- Add to the creamed mixture along with the lemon juice
- Mix until the dough is smooth
- Wrap in plastic wrap and chill for one hour
- Preheat the oven to 375 F
- Lightly grease a baking sheet or cover with parchment paper.
- On a lightly floured surface, roll the dough out to 1/4 inch thick
- Cut out circles using a 6-inch cookie cutter
- Place the cut-out cookies on the baking sheet about 2 inches apart
- Press the almonds lightly into the tops of the cookies
- Bake for 8 minutes or until golden
- Remove from the baking sheet and cool on a wire rack
