,%20a%20couple%20of%20years%20ago,%20the%20mixture%20never%20thickened.%20I%20was%20left%20with%20a%20big,%20messy%20bowl%20of%20soupy,%20garlic-flavored%20egg%20yolk%20and%20oil%20and%20a%20heavy%20feeling%20of%20failure.%20But%20that%20earlier%20defeat%20only%20heightened%20my%20sense%20of%20triumph%20at%20creating%20a%20truly%20delicious,%20perfectly%20balanced,%20lemon%20aioli%20last%20weekend!%3C/p%3E%3Cp%3EI%20had%20always%20suspected%20that%20my%20first%20attempt%20failed%20because%20I%20had%20not%20drizzled%20the%20oil%20in%20slowly%20enough%20to%20allow%20for%20the%20emulsion%20to%20form%20properly%20so%20this%20time%20I%20made%20sure%20to%20pour%20the%20oil%20into%20the%20food%20processor%20in%20a%20tiny,%20steady%20stream.%20Et%20voil%C3%A0,%20a%20mere%20three%20minutes%20later%20--%20a%20lovely%20bowl%20of%20golden%20deliciousness.%3C/p%3E%3Cp%3EI%20had%20planned%20to%20roast%20some%20beets%20and%20potatoes%20to%20dip%20in%20this%20dangerously%20addictive%20sauce%20and%20decided%20at%20the%20last%20minute%20to%20steam%20some%20asparagus,%20too,%20since%20the%20local%20offerings%20have%20been%20so%20tasty%20these%20last%20few%20weeks%20-%20my%20little%20way%20of%20tipping%20my%20hat%20to%20spring.%3C/p%3E%3Cp%3EThe%20combination%20of%20the%20sweet,%20earthy%20beets,%20crispy,%20salty%20potatoes%20and%20the%20fresh%20umami%20(which%20is%20Japanese%20for%20%22pleasant%20savory%20taste%22)%20of%20the%20asparagus%20with%20the%20lemon%20aioli%20is,%20well,%20awesome.%3C/p%3E%3Cp%3EWhile%20none%20of%20these%20components%20is%20particularly%20time-consuming%20or%20challenging%20to%20assemble,%20there%20is%20a%20fair%20amount%20of%20slicing%20and%20dicing%20involved,%20as%20well%20as%20some%20roasting%20time.%20But%20you%20could%20easily%20just%20do%20one%20or%20two%20of%20the%20veggies%20with%20the%20aioli%20if%20you're%20in%20a%20rush.%3C/p%3E%3Cp%3EHappy%20spring!%3C/p%3E%3Cp%3ELemon%20Aioli%20With%20Roasted%20Beets,%20Perfect%20Oven%20Fries%20&%20Steamed%20Asparagus%3C/p%3E%3Cp%3EServes%204-6%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20%20Begin%20by%20roasting%20the%20beets.%20Preheat%20the%20oven%20to%20450%C2%B0F.%20Place%20the%20scrubbed,%20trimmed%20beets%20in%20a%20generous%20pouch%20of%20tinfoil,%20drizzle%20them%20with%20olive%20oil%20and%20fold%20the%20foil%20over%20them%20to%20form%20a%20neat,%20enclosed%20little%20package.%20Place%20the%20package%20on%20a%20baking%20sheet%20(preferably%20one%20you%20do%20not%20care%20overmuch%20about%20as%20it%20may%20end%20up%20getting%20some%20charred%20beet%20juice%20baked%20on%20to%20it%20--%20another%20reason%20not%20to%20skimp%20with%20the%20tinfoil%20-%20I%20actually%20used%20two%20layers%20this%20time%20around),%20place%20it%20on%20the%20rack%20and%20bake%20for%2040-60%20minutes,%20until%20the%20beets%20are%20tender%20when%20poked%20with%20a%20fork.%20When%20they're%20done,%20remove%20them%20from%20the%20oven%20and%20allow%20them%20to%20cool,%20then%20slip%20the%20skins%20off%20with%20your%20fingers%20or%20a%20knife%20and%20slice%20them%20into%20rounds%20(or%20whatever%20shape%20appeals%20to%20you.)%3C/p%3E%3Cp%3E2.%20Once%20the%20beets%20are%20in%20the%20oven,%20it's%20time%20to%20turn%20your%20attention%20to%20the%20oven%20fries.%20Follow%20this%20recipe%20-%20it's%20from%20Cook's%20Illustrated%20and%20it%20never%20fails%20to%20produce%20the%20most%20perfect%20oven%20fries%20you%20could%20imagine.%3C/p%3E%3Cp%3E3.%20Now%20it's%20time%20to%20make%20the%20aioli.%20Zest%20the%20lemon%20and%20then%20juice%20it,%20placing%20both%20the%20zest%20and%20juice%20in%20the%20bowl%20of%20a%20food%20processor.%3C/p%3E%3Cp%3EToss%20the%20garlic%20cloves,%20mustard%20and%20egg%20yolks%20into%20the%20bowl%20of%20the%20food%20processor%20and%20process%20until%20smooth.%20With%20the%20motor%20running,%20begin%20to%20pour%20in%20the%20oil%20in%20a%20steady,%20thin%20stream%20--%20resist%20the%20temptation%20to%20pour%20it%20in%20quickly%20--%20the%20slow,%20steady%20addition%20is%20essential%20to%20allowing%20the%20emulsion%20to%20form.%20Continue%20to%20pour%20until%20all%20the%20oil%20has%20been%20added.%20You%20should%20see%20the%20mixture%20%22gel%22%20and%20become%20mayo-like%20during%20the%20process.%20Add%20white%20pepper%20and%20salt%20to%20taste%20and%20pulse%20a%20few%20times%20to%20incorporate%20the%20seasonings.%20Remove%20the%20aioli%20from%20the%20bowl,%20place%20it%20in%20a%20glass%20container%20with%20an%20airtight%20lid%20and%20put%20it%20in%20the%20fridge%20while%20you%20get%20the%20rest%20of%20the%20meal%20ready.%3C/p%3E%3Cp%3E*%20Please%20note%20that%20since%20aioli%20contains%20raw%20egg%20so%20you%20should%20not%20feed%20it%20to%20infants,%20the%20elderly%20or%20anyone%20with%20a%20compromised%20immune%20system%20due%20to%20the%20risk%20of%20salmonella.%20Also,%20you%20should%20keep%20it%20refrigerated%20and%20plan%20to%20use%20it%20up%20quickly.%3C/p%3E%3Cp%3E4.%20Place%20an%20inch%20or%20two%20of%20water%20in%20the%20
