- Preheat the oven to 180 degrees C/350 degrees F/gas mark 4.
- Bake the tart case hlled with greaseproof paper and baking beans as above.
- Slice the leeks finely in rounds then rinse them thorough even small leeks can harbour grit A good soak in cool water is more effective than leaving them under running water.
- Shake them dry and cook in a deep pan with the butter.
- Cover stirring from time to time.
- When they are thoroughly soft but not at all coloured they are ready.
- Put them into the pastry case.
- Add in the diced bacon to the pan and cook over a high heat for a minute or possibly two till the fat turns golden brown.
- Tip out over the leeks.
- Mix the Large eggs with the cream and lowfat milk.
- Season with salt and pepper and pour into the tart case.
- Sprinkle the cheese over the top pushing some of it down into the custard.
- Bake for 30 min or possibly till it is lightly set but still wobbly.
- Serve hot.
- Serves 6
