,%20and%20as%20a%20result%20let%E2%80%99s%20just%20say%20my%20cooking%20suffered.%20And%20if%20you%20do%20not%20believe%20me%20just%20ask%20my%20rather%20spoiled%20eldest%20who%20complained%20on%20the%20phone%20to%20my%20parents%20that%20she%20was%20%E2%80%9CSo,%20so,%20so,%20so,%20so%20SO,%20SO,%20SO%20TIRED%20of%20[insert%20what%20I%20was%20serving--I%20think%20an%20Indian%20hash%20that%20lasted%203%20nights]!!!!%20Mommy%20is%20not%20cooking%20very%20much!!!!%E2%80%9D%20This%20was%20all%20done%20at%20the%20top%20of%20her%20lungs.%20Truthfully%20we%20were%20all%20getting%20tired%20of%20hashes%E2%80%93the%20tired%20and%20overworked%20parent%E2%80%99s%20best%20friend,%20I%20think%20we%20had%20a%20Mexican%20one%20first%E2%80%93but%20methinks%20my%20daughter%20needs%20a%20lesson%20in%20how%20the%20rest%20of%20the%20world%20eats.%20Especially%20considering%20that%20I%20still%20found%20time%20to%20make%20this%20cake%20in%20the%20midst%20of%20it%20all.%3C/p%3E%3Cp%3EThis%20is%20the%20perfect%20no%20energy,%20no%20time,%20but%20I%20am%20craving%20a%20cake%20cake.%20It%20is%20literally%20the%20simplest%20cake%20I%20have%20ever%20made.%20No%20butter%20to%20soften%20or%20cream,%20I%20did%20it%20in%20a%20mixer%20but%20I%20bet%20it%20could%20be%20done%20by%20hand,%20and%20you%20don%E2%80%99t%20say%20that%20about%20very%20many%20cakes.%20I%20have%20made%20some%20other%20butter-less%20cakes%20that%20used%20cream%20in%20its%20place,%20but%20in%20those%20cakes%20the%20cream%20was%20whipped%20separately.%20Not%20this%20one.%20Next%20time%20I%20might%20slip%20in%20a%20little%20lemon%20or%20orange%20zest%20just%20to%20make%20it%20more%20exciting,%20but%20actually%20my%20family%20devoured%20it%20so%20I%20guess%20plain%20vanilla%20was%20ok%20too.%3C/p%3E%3Cp%3ESammy%20chose%20the%20bundt%20pan%20we%20used%E2%80%93which%20surprised%20me%20given%20how%20many%20more%20exciting%20ones%20I%20have%20(from%20a%204%20YO%20perspective)%20but%20perhaps%20the%20fever%20was%20frying%20her%20brain%20at%20that%20moment.%20The%20cake%20rose%20high%20above%20the%20edges%20of%20the%20pan,%20but%20did%20not%20drip%20over%20and%20deflated%20perfectly%20within%2010%20minutes%20of%20coming%20out%20of%20the%20oven.%20Keep%20in%20mind%20if%20you%20use%20a%20smaller%20bundt%20pan%20you%20will%20need%20to%20bake%20some%20of%20the%20batter%20separately.%3C/p%3E%3Cp%3ELazy%20Cream%20Bundt%20Cake%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Cake%20Keeper%20Cakes,%20Lauren%20Chattman%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20Grease%20and%20flour%20(or%20use%20something%20like%20Baker%E2%80%99s%20Joy,%20which%20I%20do)%20a%2012-cup%20bundt%20pan.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20salt%20and%20baking%20powder.%20Set%20aside.%3C/p%3E%3Cp%3EMix%20the%20eggs%20and%20sugar%20together%E2%80%93Chattman%20instructs%20to%20use%20a%20mixer%20on%20medium%20high%20speed%20for%205%20minutes,%20until%20pale%20yellow%20and%20thick,%20which%20is%20what%20I%20did.%20But%20if%20you%20can%20whip%20cream%20by%20hand,%20I%20see%20no%20reason%20why%20you%20could%20not%20do%20this%20by%20hand%20as%20well.%3C/p%3E%3Cp%3EWhile%20mixing%20(on%20medium%20low%20if%20with%20a%20mixer),%20pour%201/3%20of%20the%20cream%20into%20the%20egg%20mixture%20in%20a%20steady%20stream.%20Add%201/3%20of%20the%20flour%20mixture%20and%20mix%20just%20to%20combine.%20Scrape%20the%20sides%20down%20and%20repeat%20twice,%20until%20all%20of%20the%20flour%20and%20cream%20has%20been%20used.%20At%20the%20end%20beat%20on%20medium%20speed%20(or%20use%20your%20hand)%20for%201%20minute%20to%20combine.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20pan.%20Bake%20the%20cake%20for%20about%201%20hour,%20until%20golden%20brown%20and%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean%20or%20with%20just%20a%20few%20crumbs%20attached.%20The%20sides%20will%20also%20pull%20away%20from%20the%20pan.%20Do%20check%20the%20cake%20at%2045%20minutes%20and%20tent%20it%20with%20foil%20if%20it%20is%20getting%20too%20dark%20(I%20did%20not%20need%20to).%3C/p%3E%3Cp%3ELet%20the%20cake%20cool%20in%20the%20pan%20for%2015%20minutes%20and%20then%20invert%20it%20onto%20a%20cooling%20rack%20(I%20like%20to%20do%20this%20on%20top%20of%20parchment%20paper%20so%20that%20the%20cake%20does%20not%20sink%20into%20the%20wires).%20Let%20cool%20completely%20before%20slicing.%3C/p%3E){kind=link}
