- Preheat oven to 275 degrees Fahrenheit.
- Heat 6 c. of cream with vanilla bean and allow to cold.
- Separate 12 egg yolks removing whites. Wisk sugar into egg yolks and add in mix to cream. Add in a healthy pinch of salt. Pour mix through sieve to remove vanilla bean.
- Create a waterbath by pouring 2 c. of water into a deep oven pan. Place ramekins in pan.
- Using a ladle, pour the custard into the ramekins. Place pan in 275 degree oven and bake for 1 hour and 15 min. Ramekins are ready to be removed when the creme shakes like jello when tapped in the oven.
- Before serving, sprinkle 1 tsp. of sugar on each ramekin and caramelize with a small blowtorch.
