- 1 (3 oz.) package lime-flavored gelatin
- 1 1/3 cups sugar
- 2 cups all-purpose flour, sifted
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 5 large eggs, slightly beaten
- 1 1/2 cups vegetable oil
- 3/4 cup orange juice
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Key Lime Glaze:
- 1/2 cup Key lime juice (about 25 small Key limes or 5 large regular limes)
- 1/2 cup powdered sugar
- Cream Cheese Icing:
- 1/2 cup butter, room temperature
- 1 (8 oz.) package cream cheese, room temperature
- 1 (1 lb.) bag or box or powdered sugar

%20of%20Silvana%20and%20visit%20the%20butcher%20-%20their%20meats%20are%20great%20and%20so%20are%20their%20prices.%20%20Notice%20that%20friendly%20July%20sky%20in%20the%20pic?%20%20Well,%20there's%20STILL%20no%20sun%20in%20sight%20-%20but%20this%20Key%20Lime%20Cake%20will%20bring%20the%20sun%20into%20your%20life%20-%20it's%20fresh%20and%20light%20and%20it%20will%20make%20you%20think%20of%20summer%20no%20matter%20what%20time%20of%20year%20you%20eat%20it!%3C/p%3E%3Cp%3EThis%20recipe%20is%20from%20Trisha%20Yearwood's%20new%20cookbook,%20Home%20Cooking%20With%20Trisha%20Yearwood.%20%20I%20saw%20her%20on%20TV%20promoting%20her%20book%20and%20she%20said%20this%20cake%20was%20made%20for%20her%20dad's%2070th%20birthday%20party%20and%20everyone%20loved%20it.%20%20And%20then%20I%20saw%20the%20recipe%20in%20the%20April%20issue%20of%20Redbook%20Magazine%20and%20again%20it%20said%20this%20cake%20was%20loved%20by%20everyone.%20%20Here's%20the%20thing,%20when%20someone%20RAVES%20about%20how%20good%20something%20is,%20well,%20you've%20just%20got%20to%20sit%20up%20and%20take%20notice...and%20so%20I%20did.%20%20And%20Trisha%20was%20right%20-%20it's%20good...dang,%20dang,%20dang,%20dang,%20dang%20good!%20%205%20dangs%20on%20the%20old%20meter%20my%20friends,%20it's%20definitely%20coma%20worthy!%20%20Don't%20wait%20for%20someone%20to%20turn%2070%20before%20you%20make%20this%20cake%20-%20it%20will%20work%20for%20ANY%20birthday!%3C/p%3E%3Cp%3E(I%20served%20this%20at%20Venna's%20Birthday%20Party%20and%20it%20was%20a%20HIT!%20%20There%20were%20just%20a%20few%20slices%20left%20over%20and%20the%20mister%20said%20it%20was,%20BY%20FAR,%20the%20best%20cake%20he's%20had...I%20know,%20that%20means%20nothing%20but%20I%20thought%20I'd%20tell%20you%20anyway.)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20Grease%20and%20flour%20three%209-inch%20round%20cake%20pans.%20%20In%20a%20large%20mixing%20bowl,%20mix%20the%20gelatin,%20sugar,%20flour,%20salt,%20baking%20powder,%20and%20baking%20soda.%20%20Stir%20to%20mix%20well.%20%20In%20a%20separate%20bowl,%20combine%20the%20eggs,%20oil,%20orange%20juice,%20lemon%20juice%20and%20vanilla%20and%20whisk%20together%20until%20well%20blended.%20%20Pour%20the%20egg%20mixture%20into%20the%20flour%20mixture%20and%20mix%20well.%20%20Divide%20the%20batter%20evenly%20among%20the%20three%20pans%20and%20bake%20for%2022%20to%2025%20minutes.%20%20(Original%20recipe%20said%20to%20bake%20for%2035%20to%2040%20minutes%20but%20my%20cakes%20were%20done%20after%2023%20minutes!!!)%20%20Test%20for%20doneness%20by%20lightly%20touching%20the%20tops%20of%20the%20layers%20or%20inserting%20a%20toothpick.%20%20Also,%20the%20cakes%20should%20pull%20away%20from%20the%20side%20of%20the%20pans%20just%20slightly.%20%20Cool%20the%20layers%20in%20the%20pans%20for%20five%20minutes%20and%20then%20turn%20them%20out%20onto%20racks.%3C/p%3E%3Cp%3EWhile%20the%20layers%20are%20still%20hot,%20mix%20the%20lime%20juice%20and%20powdered%20sugar%20in%20a%20small%20bowl.%20%20Poke%20holes%20in%20the%20tops%20of%20the%20cake%20layers%20with%20a%20fork%20or%20a%20skewer.%20%20Spoon%20the%20glaze%20over%20the%20tops%20of%20the%20layers,%20letting%20it%20soak%20in.%20%20%20Allow%20the%20cake%20layers%20to%20cool%20completely%20before%20icing.%3C/p%3E%3Cp%3ETo%20make%20the%20icing:%20%20Cream%20the%20butter%20and%20cream%20cheese.%20%20Beat%20in%20the%20powdered%20sugar%20until%20the%20mixture%20is%20smooth%20and%20easy%20to%20spread.%20%20Spread%20the%20icing%20between%20the%20layers%20and%20on%20the%20top%20and%20sides%20of%20the%20cake.%20%20Refrigerate%20the%20cake%20until%20serving%20time.%20%20When%20ready%20to%20serve,%20allow%20to%20sit%20for%20about%2030%20minutes%20before%20cutting.%20%20Refrigerate%20any%20uneaten%20cake,%20covered%20in%20plastic%20wrap.%3C/p%3E%3Cp%3E(I%20forgot%20to%20take%20a%20picture%20of%20the%20cake%20after%20it%20had%20been%20cut,%20this%20picture%20is%20from%20the%20Redbook%20Magazine%20article...now%20doesn't%20that%20look%20good?!?)%3C/p%3E%3Cp%3E%22A%20friend%20is%20someone%20you%20don't%20have%20to%20talk%20to%20anymore%20once%20the%20food%20is%20on%20the%20table.%22%20%20~%20Sabrina%20Matthews%3C/p%3E){kind=link}
