- Combine kasha and egg white; mix thoroughly.
- Put kasha mix into large preheated skillet. Cook , stirring constantly, till grains separate, 2 min. Gradually pour in broth; add in thyme and pepper. Reduce heat to medium-low; cover and simmer 20-25 min, till liquid is absorbed.
- Preheat large nonstick skillet over medium-high heat; add in oil and heat for 30 more seconds. Add in leeks and mushroom; cook, stirring frequently, 5 min, till just tender.
- Spoon kasha into large bowl; fluff with fork. Add in leeks and mushroom; stir to combine and serve.
