Kasha With Cremini Mushrooms And Leeks

Ингредиенты

  • 6 ounce kasha
  • 1 x egg white
  • 2 c. vegetarian chicken broth at a boil
  • 1 tsp dry thyme
  • 1/4 tsp grnd red pepper
  • 2 tsp extra virgin olive oil
  • 1 c. sliced leeks (white part only)
  • 1 c. cremini mushrooms sliced or possibly button

Инструкции

  1. Combine kasha and egg white; mix thoroughly.
  2. Put kasha mix into large preheated skillet. Cook , stirring constantly, till grains separate, 2 min. Gradually pour in broth; add in thyme and pepper. Reduce heat to medium-low; cover and simmer 20-25 min, till liquid is absorbed.
  3. Preheat large nonstick skillet over medium-high heat; add in oil and heat for 30 more seconds. Add in leeks and mushroom; cook, stirring frequently, 5 min, till just tender.
  4. Spoon kasha into large bowl; fluff with fork. Add in leeks and mushroom; stir to combine and serve.
