- 4 T. extra-virgin olive oil, divided
- 1 c. onions, halved lengthwise and thinly sliced crosswise
- 1/4 c. white wine
- 2 quarts vegetable stock
- 1 lb. baby kale
- 2 garlic cloves, minced
- 2 c. arborio rice
- 1/2 c. freshly grated Parmesan cheese, plus more for serving
- 1/4 c. toasted pine nuts

%3C/p%3E%3Cp%3EI%20have%20mentioned%20how%20much%20I%20LOVE%20my%20big%20yellow%20Gourmet%20Cookbook,%20right?%20%20%20Well,%20while%20shopping%20at%20T.J.%20Max%20(my%20favorite%20store),%20I%20found%20a%20pile%20of%20the%20green%20Gourmet%20Today%20cookbooks%20on%20clearance%20for%20only%20$7.50!!!!!%20%20%20I%20know%20I%20have%20too%20many%20cookbooks%20but%20%20rationalized%20that%20I%20would%20buy%20it%20for%20my%20sister,%20peruse%20it%20first,%20and%20then%20give%20it%20to%20her%20for%20her%20birthday.%3C/p%3E%3Cp%3EMay%20be%20a%20new%20favorite.%20I%20am%20dubbing%20this%20the%20%22green%22%20Gourmet%20cookbook.%3C/p%3E%3Cp%3EThat%E2%80%99s%20not%20really%20re-gifting,%20is%20it?%3C/p%3E%3Cp%3EI%20thought%20I%20would%20look%20through%20it%20for%20a%20leafy%20green%20recipe%20for%20Greenslove.%20%20It%20is%20apropos%20then%20that%20I%20found%20a%20great%20idea%20for%20kale%20risotto%20in%20this%20wonderful%20GREEN%20Ruth%20Reichl%20edited%20book.%3C/p%3E%3Cp%3EWhat%20I%20found%20was%20not%20so%20much%20a%20recipe%20as%20an%20idea:%3C/p%3E%3Cp%3EKALE%20RISOTTO%20is%20ideal%20in%20winter.%20%20%20Cook%20the%20stems,%20then%20the%20leaves,%20in%20the%20broth%20for%20the%20risotto%20until%20tender,%20then%20finely%20chop.%20%20%20Cook%20the%20risotto,%20stir%20in%20the%20greens,%20along%20with%20some%20grated%20Parmesan%20at%20the%20end,%20and%20garnish%20with%20a%20handful%20of%20toasted%20pine%20nuts%20(page%20297).%3C/p%3E%3Cp%3EHello?%20%20%20Is%20this%20a%20marvelous%20idea%20or%20what?%3C/p%3E%3Cp%3ESo,%20I%20took%20my%20Risotto%20with%20Caramelized%20Onions%20and%20Rosemary%20and%20adapted%20it%20using%20Reichl%E2%80%99s%20idea.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%203%20T.%20of%20the%20olive%20oil.%20%20Add%20the%20onions%20and%20cook%20over%20moderately%20high%20heat%20until%20lightly%20browned,%20about%205%20%20minutes.%20%20Reduce%20the%20heat%20to%20low%20and%20cook,%20stirring%20occasionally,%20until%20the%20onions%20are%20very%20soft%20and%20browned,%20about%2020%20minutes.%20%20%20Add%20white%20wine%20and%20stir%20to%20deglaze%20pan.%20%20Set%20aside.%3C/p%3E%3Cp%3EBring%20the%20stock%20to%20a%20boil%20in%20a%20medium%20saucepan.%20%20%20Stir%20kale%20into%20broth%20and%20simmer,%20stirring%20occasionally%20until%20tender%20(5%E2%80%9310%20minutes).%3C/p%3E%3Cp%3EI%20used%20a%20mixture%20of%20my%20freshly%20picked%20red%20winter%20kale%20and%20the%20dried%20curly%20kale%20mom%20brought%20us.%3C/p%3E%3Cp%3EWhen%20kale%20is%20cooked%20remove%20to%20a%20fine%20colander%20or%20sieve%20placed%20over%20a%20bowl.%20%20%20Drain%20kale,%20reserving%20liquid.%20%20%20After%20kale%20is%20drained,%20chop%20and%20%20set%20aside%20but%20return%20drained%20cooking%20liquid%20to%20stock%20pan.%3C/p%3E%3Cp%3EReady%20to%20be%20chopped.%3C/p%3E%3Cp%3EBring%20stock%20back%20to%20a%20boil.%20%20Reduce%20heat%20and%20cover%20to%20keep%20hot%20over%20low%20heat.%3C/p%3E%3Cp%3EHeat%20the%20remaining%201%20T.%20of%20olive%20oil%20in%20the%20large%20saucepan.%20%20%20Add%20the%20garlic%20and%20cook%20over%20moderate%20heat%20until%20fragrant,%20about%201%20minute.%20%20%20Add%20the%20rice%20and%20cook,%20stirring,%20for%202%20minutes.%20%20%20Add%20enough%20hot%20stock%20to%20cover%20the%20rice,%20about%201%201/2%20cups,%20and%20stir%20constantly%20over%20moderate%20heat%20until%20the%20stock%20has%20been%20absorbed.%20%20Continue%20adding%20stock,%20about%201%201/2%20cups%20at%20a%20time,%20and%20cook,%20stirring,%20until%20it%20has%20been%20completely%20absorbed%20before%20adding%20more.%20%20%20The%20rice%20is%20done%20when%20the%20grains%20are%20just%20tender%20and%20the%20sauce%20is%20creamy,%20about%2020%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20pan%20from%20the%20heat%20and%20stir%20in%20the%20onions%20and%20kale%20and%201/2%20cup%20of%20Parmesan.%20%20%20Taste%20and%20season%20with%20salt%20and%20pepper.%20%20%20Garnish%20with%20toasted%20pine%20nuts%20and%20additional%20Parmesan%20if%20desired.%3C/p%3E%3Cp%3EThe%20Hubs%20liked%20this.%3C/p%3E%3Cp%3EHubby%20helped%20me%20pick%20the%20kale%20and%20asked%20what%20was%20for%20dinner.%20%20%20I%20told%20him%20we%20were%20having%20risotto.%20%20%20%20He%20began%20to%20wonder%20what%20the%20kale%20was%20for.%20%20Finally%20he%20asked,%20%E2%80%9CIs%20the%20kale%20in%20the%20risotto?%E2%80%9D%3C/p%3E%3Cp%3E%E2%80%9CYes.%E2%80%9D%3C/p%3E%3Cp%3ENo%20further%20comments%20until%20after%20dinner%20when%20he%20told%20me,%20%E2%80%9CThis%20was%20surprisingly%20good.%E2%80%9D%20%20%20I%20will%20get%20him%20to%20come%20around%20to%20eating%20more%20greens%20soon!%3C/p%3E%3Cp%3EHow%20sad!%20%20%20That%20sticker%20on%20the%20front%20makes%20me%20nostalgic%20and%20mournful%20for%20the%20magazine.%3C/p%3E%3Cp%3EI%20want%20my%20Gourmet%20magazine!%3C/p%3E){kind=link}
