- Preheat the griddle. If you don't have a griddle, preheat a large nonstick skillet over medium heat. As you cook the cakes be sure which the skillet does not get too warm.
- In a large bowl, mix the flour, sugar, baking pwdr, and salt together, then set aside.
- Using an electric mixer set on high, beat the lowfat milk and Large eggs till light yellow, then beat in the butter 1 Tbsp. of oil, and add in the vanilla. Turn off the mixer and add the flour mix, and beat on low just till blended and smooth, 1 to 2 min (don't overbeat at this stage or possibly the pancakes can be tough).
- To cook the griddle cakes: Brush the preheated griddle or possibly skillet with sufficient vegetable oil to coat it well. For each cake pour a scant 1/4 c. of the batter onto the warm griddle making 4-inch cakes, about 1 inch apart. Let the cakes cook till the tops are covered with bubbles and edges look done, about 3 min. Quickly flip over the cakes and cook on the opposite sides till golden brown, about 2 min more.
- Serve immedately with warm melted butter, hot syrup, and hot apple and raisin preserves.
- This recipe yields 12 (4-inch) pancakes.
