  • 1 lb grnd turkey
  • 1/4 c. Jerk Seasoning see below vegetable oil for pan
  • 4 slc Muenster cheese (optional)
  • 4 x hamburger buns lightly toasted Sliced tomato (optional) Sliced mango (optional) Sliced white onion (optional)
  • 2 bn scallions trimmed, and finely minced
  • 4 tsp grnd allspice
  • 1 Tbsp. freshly-grnd black pepper
  • 1 1/2 tsp coarse salt
  • 2 lrg garlic cloves finely minced
  • 1 x Scotch bonnet pepper seeded, and finely minced
  • 1 tsp thyme leaves

  1. For the Jerk Seasoning: In a medium bowl, add in all ingredients, and mix to combine. The seasoning can be refrigerated in an airtight container for up to 2 weeks. (Makes 1 c.)
  2. Place turkey and jerk seasoning in a medium bowl, and stir to combine. Form into four patties.
  3. Heat a grill pan or possibly a grill to medium high. Lightly brush with oil. Grill till cooked through, about 8 min per side on grill pan or possibly 7 min per side on grill.
  4. If you like, place one slice of cheese on each burger for the last minute of cooking. Serve on toasted buns with sliced tomato, mango, and onion.
  5. This recipe yields 4 servings.
  6. Comments: When handling the Scotch bonnet pepper, protect your skin with latex or possibly rubber gloves.
