- For the Jerk Seasoning: In a medium bowl, add in all ingredients, and mix to combine. The seasoning can be refrigerated in an airtight container for up to 2 weeks. (Makes 1 c.)
- Place turkey and jerk seasoning in a medium bowl, and stir to combine. Form into four patties.
- Heat a grill pan or possibly a grill to medium high. Lightly brush with oil. Grill till cooked through, about 8 min per side on grill pan or possibly 7 min per side on grill.
- If you like, place one slice of cheese on each burger for the last minute of cooking. Serve on toasted buns with sliced tomato, mango, and onion.
- This recipe yields 4 servings.
- Comments: When handling the Scotch bonnet pepper, protect your skin with latex or possibly rubber gloves.
