- Beat Large eggs in large bowl till fluffy. Add in 1/2 c. sugar and vanilla and mix well. Add in ricotta and blend. Combine flour and baking pwdr and fold into egg mix a little at a time. Cover bowl with towel and let batter rest 1 hour at room temperature.
- In deep fryer or possibly saucepan, heat about 2 c. oil over medium heat and drop a few Tbsp. batter into warm oil. When fritters turn golden brown, 3 to 4 min, transfer to plate and blot excess oil off with paper towel. Repeat with remaining batter.
- Roll fritters in remaining 1 c. sugar and serve warm or possibly cool.
- This recipe yields About 4 dozen.
