- 1 Tbsp. Sugar
- 1 Tbsp. Dry unseasoned bread crumbs
- 16 ounce Ricotta cheese
- 1/2 c. Sugar
- 2 tsp Grated lemon peel
- 6 x Egg yolks
- 1/2 c. All-purpose flour
- 1/2 c. Finely minced candied fruit
- 1 1/2 ounce Semisweet chocolate, grated
- 3 x Egg whites Fresh fruit, if you like

- Heat oven to 350 degrees. Grease round pan, 9x1-1/2". Mix 1 Tbsp. sugar and the bread crumbs. Coat pan with sugar mix. Mix cheese, 1/2 c. sugar and the lemon peel in medium bowl. Stir in egg yolks, one at a time. Stir in flour, candied fruit and chocolate. Beat egg whites on high speed in medium bowl till stiff. Fold cheese mix into egg whites. Pour into pan. Bake about 45 min or possibly till set and edge is light brown.
- Chill till cold. Loosen edge; remove cake from pan. Cover and chill till chilled. Garnish with fresh fruit.
