.%20We%20had%20an%20exorbitant%20amount%20of%20food,%20but%20actually%20not%20too%20many%20leftovers%20haha.%20%20My%20favorite%20part%20had%20to%20be%20the%20king%20crab%20legs%20(not%20fried,%20in%20red%20sauce),%20lobster%20(not%20fried%20either)%20and%20calamari%20and%20shrimp%20(definitely%20fried).%20We%20opened%20presents%20until%20midnight%20and%20then%20Danny%20and%20I%20made%20the%20dark,%20long%20drive%20to%20Lancaster,%20PA.%20%20The%20ride%20went%20pretty%20smooth%20with%20the%20exception%20of%20seeing%20one%20deer%20in%20the%20road,%20so%20we%20are%20pretty%20sure%20someone%20up%20there%20was%20watching%20out%20for%20us..%3C/p%3E%3Cp%3EAfter%20only%20sleeping%20about%203%20hours%20before%20Christmas%20we%20woke%20up%20kind%20of%20like%20zombies,%20but%20with%206%20kids%20opening%20presents%20we%20quickly%20woke%20up.%20It%20was%20so%20fun%20to%20see%20our%20nieces%20and%20nephews%20open%20up%20presents%20from%20Santa.%20It%20was%20controlled%20chaos.%20%20I%20was%20amazed%20at%20how%20well%20they%20all%20shared%20their%20new%20toys,%20especially%20the%20Wii%20they%20got.%3C/p%3E%3Cp%3EThat%20was%20one%20of%20the%20favorite%20toys,%20a%20Barbie%20guitar%20that%20played%20%E2%80%9CGirls%20Just%20Wanna%20Have%20Fun%E2%80%9D%E2%80%A6soon%20to%20find%20out%20it%20played%20more%20than%20that,%20but%20they%20just%20LOVE%20that%20song.%3C/p%3E%3Cp%3EAfter%20taking%20a%20power%20nap%20Danny%20and%20I%20started%20to%20make%20appetizers%20and%20dinner.%20%20We%20started%20with%20spinach%20dip%20because%20that%20needs%20to%20sit%20in%20the%20fridge%20the%20longest.%20%20We%20also%20took%20out%20the%20chicken%20parm%20and%20sauce%20so%20it%20would%20start%20to%20defrost.%3C/p%3E%3Cp%3EWe%20had%20a%20very%20successful%20dinner%20and%20then%20after%20dinner%20we%20had%20peanut%20butter%20lumps%20and%20cheesecake%20among%20other%20amazing%20cookies%20that%20my%20sister%20in%20law,%20Janet%20made.%20%20Uncle%20Tommy%20was%20so%20nice%20to%20send%20peanut%20butter%20lumps%20and%20crumb%20cake%20with%20us%20and%20the%20crumb%20cake%20was%20half%20way%20gone%20Christmas%20morning.%3C/p%3E%3Cp%3EToday%20is%20going%20to%20be%20my%20last%20of%20holiday%20desserts%20before%20I%20go%20back%20to%20my%20normal%20posts%20about%20healthy%20living%20and%20making%20good%20choices.%20This%20cheesecake%20is%20just%20TOO%20good%20to%20not%20post.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees.%20Put%20a%20pan%20of%20water%20on%20the%20bottom.%3C/p%3E%3Cp%3EI%20basically%20don%E2%80%99t%20do%20anything%20without%20my%20mixer.%3C/p%3E%3Cp%3EMix%20together%20the%20cream%20cheese,%20sugar,4%20eggs,%20lemon%20juice%20and%20vanilla.%20Beat%20it%20all%20together.%20Add%20sour%20cream,%20ricotta,%20corn%20starch%20and%20flour.%20Add%20the%20melted%20margarine.%3C/p%3E%3Cp%3EPour%20the%20mix%20into%20a%20spring%20pan%20when%20it%20is%20all%20mixed.%3C/p%3E%3Cp%3ELeave%20the%20cheesecake%20in%20for%20about%2070%20minutes.%20Check%20the%20top%20to%20make%20sure%20it%20is%20lightly%20browned.%20After%20the%20cheesecake%20is%20done%20shut%20off%20the%20oven%20and%20leave%20it%20in%20with%20the%20door%20closed%20for%20an%20hour.%3C/p%3E%3Cp%3ETake%20it%20out%20and%20put%20it%20in%20the%20fridge%20until%20you%20are%20ready%20to%20serve!%3C/p%3E%3Cp%3EEnjoy%20it!%20A%20couple%20small%20bites%20of%20this%20is%20all%20you%20need%20to%20satisfy%20your%20sweet%20tooth!%3C/p%3E%3Cp%3Edairy,%3C/p%3E%3Cp%3Edessert,%3C/p%3E%3Cp%3Eholidays,%3C/p%3E%3Cp%3Eitalian%3C/p%3E){kind=link}
