.%20There%20is%20one%20difference%20though.%20In%20an%20Ethiopian%20restaurant%20the%20waitress%20encourages%20you%20to%20eat%20with%20your%20hands%20and%20brings%20silverware%20only%20if%20you%20ask%20for%20it.%20The%20Indian%20restaurant%20on%20the%20other%20hand%20brings%20you%20silverware%20by%20default%20and%20you%20are%20not%20really%20encouraged%20to%20use%20your%20hands.%3C/p%3E%3Cp%3EAnyway,%20today's%20post%20is%20not%20about%20these%20similarities%20or%20differences,%20it%20is%20about%20the%20fermented%20sourdough%20crepes/flat%20breads%20or%20Injeras.%20They%20are%20made%20with%20a%20sourdough%20batter%20made%20with%20teff%20which%20is%20naturally%20fermented.%20Teff%20leads%20all%20the%20grains,%20by%20a%20wide%20margin%20in%20its%20calcium%20content.%20It%20is%20also%20an%20excellent%20source%20of%20vitamin%20C,%20a%20nutrient%20not%20commonly%20found%20in%20grains.%20Teff%20is%20high%20in%20resistant%20starch,%20a%20newly-discovered%20type%20of%20dietary%20fiber%20that%20can%20benefit%20blood-sugar%20management,%20weight%20control,%20and%20colon%20health.%20A%20gluten-free%20grain%20with%20a%20mild%20flavor,%20teff%20is%20a%20healthy%20and%20versatile%20ingredient%20for%20many%20gluten-free%20products.%20It%E2%80%99s%20been%20estimated%20that%20Ethiopians%20get%20about%20two-thirds%20of%20their%20dietary%20protein%20from%20teff.%20%20Many%20of%20Ethiopia%E2%80%99s%20famed%20long-distance%20runners%20attribute%20their%20energy%20and%20health%20to%20teff.%20So%20teff%20is%20indeed%20a%20super-food,%20without%20the%20hype%20(yet).%3C/p%3E%3Cp%3EI%20browsed%20thru%20a%20lot%20of%20ethiopian%20recipes%20and%20videos%20to%20learn%20to%20make%20Injeras.%20They%20are%20generally%20made%20with%20teff%20flour%20and%20water%20mixed,%20and%20kept%20aside%20to%20ferment%20for%20a%20couple%20of%20days.%20I%20could%20only%20get%20whole%20teff%20and%20not%20the%20flour,%20so%20I%20decided%20to%20go%20the%20South%20Indian%20way%20to%20make%20the%20batter.%20I%20ground%20the%20teff%20with%20salt%20and%20water,%20and%20fermented%20it%20for%2018-24%20hours.%20I%20make%20my%20crepes%20just%20like%20how%20we%20make%20dosas.%20It%20can%20be%20served%20with%20any%20Indian%20style%20side%20dishes%20(preferably%20the%20drier%20varieties).%20I%20serve%20them%20with%20a%20side%20dish%20made%20of%20collard%20leaves%20which%20is%20very%20typical%20in%20African%20cuisines.%20I%20also%20serve%20them%20with%20South%20Indian%20style%20spicy%20fish%20curries%20which%20go%20really%20well%20with%20these%20crepes.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ESoak%20the%20teff%20in%20water%20for%20about%208-12%20hours%3C/p%3E%3Cp%3EDrain%20and%20grind%20the%20teff%20with%20about%202%20cups%20of%20water%20and%20sea%20salt.%20Grind%20till%20you%20get%20a%20fine%20batter%20like%20a%20dosa%20batter.%20(I%20use%20vitamix,%20but%20it%20should%20be%20easily%20done%20on%20any%20reasonably%20powdered%20blender)%3C/p%3E%3Cp%3EKeep%20aside%20in%20a%20warm%20place%20for%20about%2018-24%20hours%20to%20ferment.%20Once%20the%20batter%20is%20fermented,%20you%20will%20see%20the%20batter%20as%20risen,%20bubbly,%20and%20cracked.%3C/p%3E%3Cp%3EHeat%20a%20pan%20(non%20stick%20or%20cast%20iron)%20and%20pour%20about%201/4%20to%201/2%20cup%20of%20batter%20depending%20on%20how%20big%20is%20your%20pan.%3C/p%3E%3Cp%3EEither%20fill%20the%20batter%20in%20a%20thin%20layer%20to%20fill%20the%20whole%20area%20of%20the%20pan%20or%20just%20pour%20the%20batter%20in%20the%20middle%20and%20just%20tilt%20the%20pan%20to%20shape%20the%20crepe.%3C/p%3E%3Cp%3EOnce%20you%20start%20seeing%20some%20bubbles%20or%20eyes%20on%20the%20crepe,%20cover%20the%20pan%20with%20a%20lid.%3C/p%3E%3Cp%3EWhen%20you%20start%20seeing%20a%20lot%20of%20steam%20coming%20thru%20the%20lid,%20remove%20the%20lid%20and%20slowly%20start%20removing%20the%20crepe%20from%20all%20sides.%3C/p%3E%3Cp%3EDon't%20flip%20the%20crepe,%20directly%20transfer%20to%20a%20pan.%20Roll%20up%20and%20keep%20stacking%20while%20you%20make%20the%20remaining%20crepes.%3C/p%3E%3Cp%3EEnjoy%20with%20your%20choice%20of%20side%20dishes!!%3C/p%3E){kind=link}
