%20from%20my%20kitchen,%20because%20I%20said%20it%20with%20the%20pate%20brisee,%20and%20now%20again%20with%20pasta.%20This%20dough%20was%20divine.%20It%20was%20a%20pleasure%20to%20knead%20and%20to%20roll%20out.%20It%20was%20smooth%20and%20pliable%20and%20felt%20light.%20I%20felt%20like%20I%20had%20control%20over%20it:%20how%20much%20flour%20to%20add,%20how%20much%20to%20knead,%20etc.%20And%20if%20you%20make%20the%20pasta%20in%20a%20large%20bowl,%20there%20is%20no%20egg%20wrangling%20if%20it%20escapes%20the%20well,%20though%20I%20feel%20like%20I%20could%20probably%20do%20that%20too,%20if%20I%20put%20my%20mind%20to%20it.%20This%20does%20make%20a%20ton%20of%20dough%20though,%20and%20that%E2%80%99s%20the%20weird%20part.%20I%20got%20the%20proportions%20from%20Mario%20Batali,%20and%20this%20apparently%20is%20supposed%20to%20make%20about%20a%20pound%20of%20pasta.%20I%20used%20close%20to%20four%20cups%20of%20flour%20and%20five%20eggs.%20(I%20don%E2%80%99t%20have%20a%20scale%20down%20here.)%20And%20the%20recipe%20I%20use%20in%20the%20processor?%20Two%20cups%20of%20flour,%20two%20eggs%20and%20a%20little%20bit%20of%20water.%20Also%20supposedly%20makes%20about%20a%20pound.%20I%20smell%20an%20experiment.%20I%20do%20know%20that%20my%20more%20recent%20attempt%20made%20more%20dough,%20and%20two%20batches%20made%20WAY%20more%20than%20needed%20for%208%20adults.%20%20It%20looked%20like%20a%20pasta%20bomb%20went%20off%20in%20the%20kitchen%E2%80%A6%3C/p%3E%3Cp%3Eexplosion%3C/p%3E%3Cp%3EIt%20was%20everywhere.%20But%20those%20granite%20countertops%20are%20a%20pretty%20awesome%20surface%20for%20pasta%20dough%20wrangling,%20so%20it%20worked%20out.%3C/p%3E%3Cp%3EI%20rolled%20the%20dough%20out%20into%20sheets%20and%20then%20cut%20it%20myself,%20so%20I%20could%20do%20a%20wider%20pasta%20than%20the%20machine%20allowed%20for.%20It%20only%20took%20a%20minute%20or%20two%20to%20cook,%20I%20combined%20it%20with%20the%20sauce%20and%20dinner%20was%20served.%3C/p%3E%3Cp%3Epappardelle%20with%20Bolognese%3C/p%3E%3Cp%3EFresh%20Pasta%20(makes%20enough%20for%20four%20adults)%3C/p%3E%3Cp%3EAdapted%20from%20Mario%20Batali%3C/p%3E%3Cp%3E4%20cups%20all-purpose%20flour,%20plus%20more%20for%20kneading%20if%20necessary%3C/p%3E%3Cp%3E5%20eggs%3C/p%3E%3Cp%3Epinch%20of%20salt%3C/p%3E%3Cp%3ECombine%203%201/2%20cups%20of%20flour%20and%20the%20salt%20in%20a%20wide%20bowl%20or%20on%20a%20flat%20surface.%20Make%20a%20large%20pile%20of%20flour%20and%20then%20create%20a%20well%20in%20the%20middle.%20Crack%20the%20eggs%20into%20the%20well,%20making%20sure%20the%20well%20is%20large%20enough%20and%20has%20high%20enough%20sides%20to%20contain%20the%20eggs%20easily.%20With%20a%20fork,%20begin%20to%20scramble%20the%20eggs,%20pulling%20flour%20from%20the%20inside%20of%20the%20well%20walls.%20(I%20find%20pulling%20from%20the%20bottom%20of%20the%20walls%20help%20keeps%20the%20well%20intact.)%20The%20dough%20will%20start%20to%20come%20together,%20and%20will%20be%20too%20hard%20to%20mix%20with%20the%20fork.%20At%20this%20point%20start%20to%20use%20your%20hands%20to%20knead%20the%20flour%20into%20the%20dough.%20The%20dough%20will%20be%20fairly%20wet%20and%20shaggy.%20When%20it%20becomes%20more%20difficult%20to%20incorporate%20the%20flour%20in%20the%20bowl,%20remove%20the%20dough%20to%20a%20heavily%20floured%20surface%20and%20put%20the%20bowl%20aside.%20Knead%20the%20dough,%20adding%20more%20flour,%20until%20the%20dough%20is%20no%20longer%20sticky,%20this%20could%20take%20up%20to%20ten%20minutes.%20Do%20not%20add%20too%20much%20flour,%20the%20dough%20should%20remain%20light%20and%20easy%20to%20knead.%20When%20it%20is%20smooth,%20set%20it%20aside%20sprinkled%20lightly%20with%20flour,%20and%20cover%20with%20plastic%20wrap.%20Let%20rest%20for%2045%20minutes%20to%20an%20hour,%20and%20then%20roll%20through%20a%20machine%20or%20by%20hand%20to%20the%20shape%20and%20width%20of%20your%20choice.%20Fresh%20pasta%20should%20only%20be%20cooked%20in%20boiling%20water%20for%202-3%20minutes%20until%20al%20dente.%3C/p%3E%3Cp%3ERagu%20Bolognese%20(makes%20A%20LOT%20%E2%80%93%20enough%20for%20two%20batches%20of%20fresh%20pasta)%3C/p%3E%3Cp%3EAdapted%20from%20Molto%20Mario%3C/p%3E%3Cp%3EMelt%20the%20butter%20and%20oil%20together%20in%20a%20large%20heavy%20pot%20over%20medium%20heat.%20Add%20the%20onion,%20carrot,%20celery%20and%20garlic%20and%20cook%20until%20the%20aromatics%20are%20soft.%20Turn%20the%20heat%20up%20to%20medium%20high%20and%20add%20all%20the%20meat.%20Cook%20until%20the%20meat%20browns,%208-10%20minutes.%20Add%20the%20tomato%20paste,%20stir%20the%20mixture%20to%20combine,%20and%20cook%20until%20the%20mixture%20is%20aromatic.%20Add%20in%20the%20milk,%20wine,%20thyme,%20salt%20and%20pepper%20and%20bring%20sauce%20to%20a%20boil.%20Reduce%20heat%20to%20low,%20cover%20and%20let%20simmer,%20stirring%20occasionally%20for%201%201/2%20%E2%80%93%202%20hours,%20until%20sauce%20reduces%20and%20comes%20together.%20Serve%20over%20your%20favorite%20pasta%20(pappardelle%20is%20traditional)%20or%20
