%20%20It's%20still%20a%20lot%20of%20ground%20to%20cover....%20all%20spurred%20by%20this%20elegant,%20yet%20unassuming,%204%20liter%20Casserole%20dish.%3C/p%3E%3Cp%3EThe%20F-14-B%20and%20matching%20domed%20F-14-C.%3C/p%3E%3Cp%3EThis%20is%20what%20I%20had%20bought%20at%20Wally%20World%20(Walmart)%20only%20to%20discover%20that%20it%20was%20made%20of%20Stoneware.%20But%20it's%20all%20OK%20now,%20because%20in%202010,%20I%20finally%20found%20the%20piece%20I%20%22thought%22%20I%20was%20buying%20back%20in%202007.%3C/p%3E%3Cp%3EAnd%20what%20do%20I%20do%20with%20this%20wonderful%204%20liter%20casserole%20in%20beautiful%20French%20White?%3C/p%3E%3Cp%3EI%20bake%20trout...%20%20Fresh%20from%20the%20river's%20and%20lakes%20of%20Mt.%20Hood%20(and/or%20the%20Snake%20River).%20%20And%20for%20this%20particular%20French%20recipe,%20which%20seems%20%C3%A0%20propos%20since%20it's%20a%20French%20White%20Casserole,%20Corningware's%20ability%20to%20go%20from%20Oven%20to%20Rangetop%20is%20showcased%20once%20again%20in%20all%20it's%20amazing%20amazingness.%20%20(I%20know,%20that%20was%20a%20little%20gushy,%20but%20I%20can't%20stop%20myself%20sometimes)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400F%20(180C)%20Degrees,%20and%20remove%20the%20feathery%20fronds%20from%20the%20Fennel%20and%20set%20them%20aside.%3C/p%3E%3Cp%3EThinly%20slice%20the%20Fennel%20on%20a%20mandoline%20and%20place%20in%20a%204%20quart%20Casserole%20(F-14-B).%3C/p%3E%3Cp%3EAdd%20the%20Leeks%20and%20Carrot%20batons.%3C/p%3E%3Cp%3EDrizzle%20with%20Olive%20oil%20and%20season%20with%20Salt%20and%20Pepper.%3C/p%3E%3Cp%3EToss%20everything%20well%20to%20coat.%3C/p%3E%3Cp%3EBake%20for%2020%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20chop%20the%20Fennel%20fronds%20finely,%20mince%20the%20Shallot%20and%20mince%20the%20Capers,%20then%20combine%20them%20to%20make%20the%20stuffing%20mi.xture%3C/p%3E%3Cp%3EGrab%20your%20prepared%20Trout%20(cleaned,%20scaled%20and%20heads%20removed)%20and%20divide%20the%20stuffing%20between%20the%20fish.%3C/p%3E%3Cp%3EStuff%20a%20Lemon%20slice%20and%20a%20Bay%20Leaf%20inside,%20on%20top%20of%20the%20filling.%20(If%20your%20trout%20are%20smaller,%20you%20may%20need%20to%20halve%20the%20Lemon%20slices.)%3C/p%3E%3Cp%3ETop%20this%20off%20with%202%20pieces%20of%20butter.%3C/p%3E%3Cp%3EWhen%20the%20vegetables%20are%20done,%20reduce%20the%20oven%20temperature%20to%20275F%20(140C)%20degrees%20and%20remove%20the%20vegetables%20from%20the%20oven%20giving%20them%20a%20toss%20before%20laying%20down%20the%20Trout%20on%20top%20of%20the%20vegetables.%3C/p%3E%3Cp%3ECombine%20Vermouth%20and%20Fish%20stock%20in%20a%20small%20pitcher.%3C/p%3E%3Cp%3EPour%20the%20stock/wine%20over%20the%20Trout.%3C/p%3E%3Cp%3EThen%20drizzle%20with%20Olive%20Oil%20and%20season%20with%20Salt%20and%20Pepper.%3C/p%3E%3Cp%3ECover%20with%20either%20the%20glass%20lid%20(F-14-C)%20or%20with%20tin%20foil.%3C/p%3E%3Cp%3EBake%20for%2060%20to%2085%20minutes,%20just%20until%20the%20fish%20is%20opaque%20and%20begins%20to%20flake.%20(it%20only%20took%201%20hour%20for%20mine)%3C/p%3E%3Cp%3ERemove%20trout%20from%20the%20casserole%20dish%20and%20place%20on%20a%20plate,%20tented%20with%20foil.%3C/p%3E%3Cp%3EPlace%20the%20baking%20dish%20(F-14-B)%20on%20the%20stove%20set%20for%20medium%20flame.%3C/p%3E%3Cp%3ESimmer%20for%202-3%20minutes%20to%20allow%20the%20juices%20to%20reduce%20slightly.%3C/p%3E%3Cp%3EAdd%20the%20Heavy%20Cream%20and%20Chervil.%3C/p%3E%3Cp%3EBring%20back%20to%20a%20simmer%20for%201%20minute%20longer%20to%20slightly%20thicken%20the%20sauce.%3C/p%3E%3Cp%3ERemove%20the%20baking%20dish%20from%20the%20stove%20and%20serve%20by%20placing%20a%20Trout%20on%20each%20plate,%20and%20surround%20it%20with%20the%20vegetable%20mixture.%3C/p%3E%3Cp%3EAh!%20%20French%20Food%20in%20French%20White.%20%20Does%20it%20get%20much%20better%20than%20this?%20%20I%20think%20not.%3C/p%3E%3Cp%3EWhere%20is%20your%20Corningware??%3C/p%3E){kind=link}
