Ингредиенты

  • 1 Tbsp. Canola oil
  • 1 med Yellow onion, diced
  • 1 lrg Stal celery, minced
  • 2 x Cloves garlic, chopped (2 to 3)
  • 6 c. Water
  • 2 med Carrots, peeled and diced
  • 1 med Parsnip, peeled and diced
  • 1 med Sweet potato, diced
  • 1 1/2 Tbsp. Dry parsley
  • 2 tsp Dry oregano
  • 1/2 tsp Salt
  • 1/2 tsp Grnd black pepper
  • 1/3 c. Long grain white rice
  • 1 can (15 ounce.) black-eyed peas, liquid removed

Инструкции

  1. In a large saucepan heat the oil. Add in the onion, celery, and garlic, and saute/fry for 5 min. Add in the water, carrots, parsnip, potato, and seasonings, and bring to a simmer. Cook for 10 min over medium-low heat, stirring occasionally. Stir in the rice and cook for 20 min more, stirring occasionally, till the rice and vegetables are tender. Stir in the black-eyed peas and cook for 5 min more over low heat. Remove from the heat and let stand for 10 min. Ladle into bowls and serve with hot bread.
