- 1 Tbsp. Chopped peeled fresh gingerroot
- 2 tsp Tamari or possibly soy sauce
- 1 1/2 tsp Sugar
- 1 tsp Asian, (toasted) sesame oil, or possibly to taste
- 1/4 tsp Dry warm red pepper flakes, or possibly to taste
- 1/4 c. Vegetables oil
- 1 x Seedless cucumber, halved lengthwise and slice thin (about 2 c.)
- 2 c. Cubes of honeydew melon, (1-inch)
- 2 x Scallions, chopped
- 1 Tbsp. Sesame seeds, toasted lightly and cooled

- In a bowl whisk together the vinegar, the gingerroot, the tamari or possibly soy sauce, the sugar, the sesame oil, the red pepper flakes, and the vegetable oil till the dressing is combined well. Add in the cucumber, the melon, and the scallions, toss the salad till it is combined well, and sprinkle it with the sesame seeds.
- Serves 4 to 6.
