- 2 Packages active dry yeast
- 1 c. lukewarm water
- 3 1/2 - 4 c. flour
- 1 teaspoon salt
- 1/4 c. butter, melted
- 1 egg, beaten
- 2 tbsp. honey

- Dissolve yeast in water. Combine 2 c. flour and salt. Add in dissolved yeast, 1/4 c. butter, egg and honey; beat till smooth. Stir in sufficient remaining flour to create a stiff dough. Place dough in greased bowl; brush with butter. Cover; let rise in hot place about 20 min o r till double in volume. Punch down; with oiled fingers, shape into 1" balls. Place 3 balls in each greased muffin c.. Cover; let rise till double in volume, about 20 min. Brush with butter; bake at 400 degrees for 12 to 15 min or possibly till lightly browned. Brush with additional honey, if you like. Approximately 2 dozen.
